History & Origins
Zurich’s Aristocratic Guildhall Specialty
First documented in a 1947 Swiss cookbook and perfected in Zurich’s historic guildhouses (Zunfthäuser) along the Limmat river, Zürcher Geschnetzeltes has reigned as Switzerland’s finest culinary emblem alongside golden potato rösti.
Ingredients
Tender Sliced Veal & White Wine Reduction
- •1.5 lbs Milk-fed veal top round or tenderloin, cut into thin 1/2-inch strips
- •10 oz Fresh white button mushrooms, cleaned and thinly sliced
- •2 medium French shallots, finely minced
- •3 tbsp Clarified butter (Bratbutter) for searing
- •3/4 cup Dry Swiss white wine (such as Fendant or Chasselas)
- •1/2 cup Rich veal stock or concentrated brown demi-glace
- •3/4 cup Heavy double cream (Vollrahm)
Finishing, Garnishes & Chef’s Additions
- •1/4 cup Fresh Italian flat-leaf parsley, finely minced
- •1 tsp Fresh lemon juice for final bright acidity balance
- •Pinch White pepper and freshly grated nutmeg
- •1 large Golden pan-fried Swiss potato Rösti cake for accompaniment
Step-by-Step Instructions
Preparation & Method
Heat 2 tbsp clarified butter in a large skillet over high heat until smoking. Working in fast uncrowded batches, flash-sear the seasoned veal strips for just 60 to 90 seconds until browned on the exterior but still rosy inside. Immediately remove veal to a warm plate.
Add remaining clarified butter to the pan. Sauté sliced mushrooms over medium-high heat until they release their water and turn golden brown (4 minutes). Add minced shallots, stirring for 60 seconds until translucent and fragrant.
Pour in dry Swiss white wine, scraping all caramelized bits from the bottom. Boil rapidly until wine reduces by half. Stir in veal demi-glace and heavy cream. Simmer over medium heat for 3-4 minutes until sauce reduces to a rich, spoon-coating velvety consistency.
Remove sauce from direct heat. Fold in rested veal strips along with any accumulated plate juices, fresh parsley, lemon juice, and nutmeg. Stir gently for 60 seconds just to warm the meat without overcooking. Serve immediately with hot, crispy Swiss potato Rösti.
Beverage Pairing
Swiss Fendant (Chasselas) from Valais or Pinot Noir
A crisp, slightly mineral Chasselas mirrors the wine used in the deglaze and cuts the richness of heavy cream and buttery potato rösti.
Culinary Science Insight
Rapid Myosin Contraction & Off-Heat Reintegration
Veal muscle fibers contain low connective tissue and contract harshly if boiled; searing in seconds and reintegrating off the flame ensures the meat remains succulent and tender rather than chalky.
