History & Origins

The Crown Jewel of the Georgian Supra Table

From the Georgian root ‘tsivi’ meaning cold, Satsivi is synonymous with winter celebrations, New Year banquets, and traditional supra feasts. Its signature flavor comes from Georgia’s botanical triumvirate: blue fenugreek, dried yellow marigold, and English walnuts.

Ingredients

Poached-Roasted Chicken & Spiced Walnut Sauce

  • •3.5 lbs Whole chicken or bone-in chicken thighs, cleaned and trimmed
  • •1 lb (4 cups) Light English walnut halves, freshly shelled for zero bitterness
  • •3.5 cups Strained hot chicken poaching broth
  • •2 medium Yellow onions, pureed finely and sweated in butter
  • •5 cloves Fresh garlic, crushed in a mortar with sea salt
  • •1.5 tbsp Blue fenugreek (utskho suneli) and 1.5 tbsp dried ground coriander seeds
  • •1 tbsp Georgian marigold petals (Imeretian saffron / zaprana) for yellow glow
  • •2 tbsp White wine vinegar or pomegranate juice to brighten

Finishing, Garnishes & Chef’s Additions

  • •1/3 cup Fresh ruby pomegranate arils (seeds)
  • •1 tbsp Pure cold-pressed walnut oil or spiced chili oil for marbled swirl
  • •1 platter Hot cornmeal porridge (ghomi) or shoti bread for dipping
  • •2 sprigs Fresh purple basil for aromatic garnish

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Parboil & Roast Chicken

Place chicken in a stockpot, cover with water and a pinch of salt, and simmer for 20 minutes. Skim broth and reserve. Transfer chicken to a roasting pan and bake at 400°F (200°C) for 15 minutes until skin turns golden. Carve into serving portions.

2
Step 2: Grind Walnut Paste & Spices

Pass walnuts through a fine meat grinder twice (or food processor) with garlic until a fine, creamy paste forms. Pound with blue fenugreek, dried marigold, coriander, red pepper, and salt until aromatic oils release.

3
Step 3: Whisk Hot Broth into Velvety Baji

In a saucepan, slowly whisk hot reserved chicken broth into the spiced walnut paste, adding sweated pureed onions and vinegar. Bring just to the barest simmer over low heat (do not boil, or walnut oils will split) until the sauce coats a spoon like heavy cream.

4
Step 4: Submerge Chicken & Steep Cold

Arrange warm roasted chicken pieces in a wide serving vessel. Pour the warm walnut sauce completely over the chicken. Let cool to room temperature, then refrigerate for at least 6 hours (or overnight) so the poultry drinks in the walnut aromatics. Garnish with ruby pomegranate seeds and walnut oil before serving cool.

Beverage Pairing

Georgian Amber Qvevri Rkatsiteli / Tsinandali

An ancient Georgian Qvevri skin-contact amber wine brings tea-like tannins, dried apricot notes, and acidity that pierce rich walnut fats.

Culinary Science Insight

Sub-Boiling Walnut Emulsion & Cold Lipophilic Infusion

Walnut proteins act as natural surfactants that suspend nut oils into poultry broth below 185°F; during prolonged cold resting, aromatic terpene compounds from fenugreek and marigold migrate directly into cold chicken fat.
