Traditional Greek Galaktoboureko (Crispy Phyllo Custard Pie with Citrus Syrup)
Silky orange-scented semolina custard baked between dozens of clarified butter-basted phyllo sheets, drenched immediately after baking in cold citrus honey syrup.
History & Origins
The Byzantine Legacy of Milk Pies
Deriving from the Greek word gala (milk) and Turkish börek (pie), Galaktoboureko traces its lineage directly back to Byzantine pastry shops in Constantinople. The contrast between brittle, buttery phyllo sheets and a cloud-like, pillowy semolina custard soaked in orange peel syrup represents Mediterranean confectionery perfection.

Step-by-Step Instructions
Preparation & Method
Combine water, sugar, honey, orange peel, and cinnamon stick in a pot. Bring to a boil, simmer for 5 minutes, stir in lemon juice and orange blossom water, then remove from heat. Chill completely in the refrigerator (syrup must be cold when poured over hot pastry).
Heat milk and cream in a heavy saucepan until scalding. In a bowl, whip eggs, yolks, and sugar until pale and thick. Rain in semolina while whisking constantly. Temper with 1 cup hot milk, return all to pan, and whisk over medium-low heat until thick custard forms. Stir in 2 tbsp butter and vanilla.
Brush a 9×13-inch baking dish with melted butter. Layer 8 sheets of phyllo on the bottom, brushing each liberally with melted clarified butter. Pour warm custard over phyllo and smooth evenly. Top with remaining 8 sheets of phyllo, brushing each with butter. Score top layers into diamond portions.
Bake at 350°F (175°C) for 45–50 minutes until puffed and intensely golden. Remove scorching hot pie from the oven and immediately ladle the cold syrup over the entire surface. The pastry will hiss as it drinks the syrup. Let cool for 2 hours before slicing.
Beverage Pairing
Samos Muscat Vin Doux / Greek Briki Coffee
A golden Aegean Muscat from Samos offers luscious honeyed apricot notes that mirror the orange syrup, while a strong, bitter Greek briki coffee provides contrast.
Culinary Science Insight
Thermal Shock Syrup Absorption & Crispness
Pouring refrigerator-cold syrup onto a 350°F piping hot pastry causes rapid capillary suction without boiling the butter layers, preserving brittle crackling texture without sogginess.
