Classic French Trout Meunière with Toasted Almonds (Truite Amandine)
Fresh delicate freshwater rainbow trout dredged in seasoned flour, pan-seared golden in French butter, and blanketed in a sizzling hazelnut brown butter sauce with toasted sliced almonds, lemon, and fresh parsley.
History & Origins
The Timeless Parisian Bistro Standard
‘À la meunière’ (‘in the style of the miller’s wife’) refers to the classic technique of lightly dusting fish in flour prior to pan-frying in clarified butter. Truite Amandine elevated this rustic preparation in Belle Époque Paris by showering the finished trout in browned almonds.
Ingredients
Fresh Trout & Seasoned Dredge
- •4 whole (10-12 oz each) Fresh rainbow trout, cleaned, butterflied or filleted skin-on
- •1/2 cup All-purpose flour seasoned with fine sea salt & white pepper
- •3 tbsp Clarified butter (or high-heat cooking oil) for pan searing
- •6 tbsp Unsalted French butter (beurre d’Isigny) for sauce noisette
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Raw sliced blanched almonds
- •2 tbsp Freshly squeezed lemon juice & 1 lemon thinly sliced into wheels
- •1/4 cup Fresh Italian flat-leaf parsley, finely minced
- •1 lb Steamed baby fingerling potatoes with butter and sea salt
Step-by-Step Instructions
Preparation & Method
Thoroughly pat the trout fillets completely dry with paper towels. Season lightly with salt. Dredge fillets in seasoned flour, vigorously tapping off all excess so only a gossamer coating remains.
Heat clarified butter in a large non-stick or cast-iron skillet over medium-high heat until shimmering. Carefully lay trout fillets skin-side down. Sear for 3-4 minutes until golden and crisp; gently flip and cook 2 minutes more. Transfer to a warm platter.
Wipe skillet clean. Melt unsalted butter over medium heat. When butter foams, add sliced almonds. Swirl skillet constantly for 2-3 minutes as butter milk solids toast to a nutty hazelnut aroma and almonds turn golden amber.
Remove skillet immediately from heat; squeeze in fresh lemon juice and stir in chopped parsley (the butter will sizzle vigorously). Pour sizzling almond brown butter immediately over the warm trout fillets. Serve with lemon wheels and fingerling potatoes.
Beverage Pairing
Sancerre / Chablis Premier Cru
A crisp, flinty Loire Valley Sancerre (Sauvignon Blanc) or steely un-oaked Chablis provides mineral acidity to slice through decadent brown butter.

Beurre Noisette Pyrolysis & Delicate Protein Protection
The thin flour dusting shields delicate trout albumin proteins from seizing directly on hot metal. Heating butter past 260°F toasts casein milk solids into aromatic pyrazine compounds before lemon juice acid stops oxidation.
