Classic French Kouign-Amann (Breton Caramelized Laminated Pastry)
The legendary cake of Brittany featuring yeasted bread dough layered with copious amounts of cultured salted Breton butter and cane sugar, baked until caramelized into a crackling, glassy amber crust with a buttery, flaky interior.
History & Origins
Douarnenez Brittany Salted Butter Heritage
Translating literally as ‘cake of butter’ in the Celtic Breton language, Kouign-Amann was invented around 1860 in Douarnenez, Finistère by baker Yves-René Scordia. Created during a flour shortage when butter was plentiful, it achieved cult worldwide status for its unique caramelized lamination.

Step-by-Step Instructions
PREPARATION & METHOD
Dissolve yeast in lukewarm water for 5 minutes. Stir into flour and salt to form a soft, supple bread dough. Knead for 4 minutes until smooth, cover, and let proof in a warm place for 45 minutes until doubled in bulk, then chill for 30 minutes.
Roll dough into a 12-inch square. Pound cold salted butter into an 8-inch square block and place in the center rotated 45 degrees. Fold flaps over like an envelope, seal seams, roll out into a rectangle, and execute a letter fold. Chill for 30 minutes.
Roll out dough again, but dust work surface and dough liberally with granulated cane sugar instead of flour. Perform two more letter folds, rolling sugar directly into the layers. Fold corners inward toward the center and gently nestle into a buttered, sugar-crusted 9-inch cake pan.
Proof for 25 minutes. Bake at 375°F (190°C) for 35 minutes until dark amber and bubbling with caramel. Invert onto a parchment-lined cooling rack within 2 minutes of exiting the oven to prevent caramel from cementing to the pan.
Beverage Pairing
Breton Cidre Bouché Brut / Double Shot Espresso
A sparkling, dry, tannic Breton farmhouse cider cuts through the heavy butter and sugar caramel, or enjoy alongside an intense espresso.
Culinary Science Insight
Sucrose Pyrolysis & Butter Steam Delamination
As the water in butter vaporizes at 212°F, it forces dough layers apart (steam lift). Concurrently, dry granulated sucrose melts at 320°F and undergoes thermal decomposition (caramelization), creating glass-like caramelized lactones and furans that seal the flaky pastry.
