Classic French Gâteau Basque (Traditional Flaky Cake with Vanilla Pastry Cream)
A storied southwestern French dessert consisting of a crisp, buttery sable-shortbread crust encasing a luscious core of dark-rum and almond-infused vanilla pastry cream, finished with cross-hatched golden egg wash.
History & Origins
The Basque Country’s Confectionery Monument
Emerging in the 18th century from Cambo-les-Bains in the Labourd province of the French Basque country, Gâteau Basque (Etxeko biskotxa) originally celebrated the arrival of vanilla pastry cream introduced by traveling pastry chefs.

- •3 tbsp Cornstarch and 1/3 cup sugar for pastry cream
- •2 tbsp Dark aged rum or Basque dark cherry liqueur
Finishing, Garnishes & Chef’s Additions

- •1 tsp Finely grated lemon zest folded into pastry dough

Step-by-Step Instructions
PREPARATION & METHOD
Whisk egg yolks, sugar, and cornstarch. Temper with warm vanilla-steeped milk, cook until thickened and bubbling, stir in dark rum, and chill covered in plastic wrap.
Cream soft European butter and sugar until pale. Add yolks, lemon zest, and flour, mixing just until a soft dough forms. Divide into two disks (60% base, 40% top) and chill for 1 hour.
Roll bottom crust into a buttered 9-inch tart pan with removable base. Pipe the chilled pastry cream into the center, leaving a 1/2-inch border. Top with second rolled disk and crimp edges tightly.
Brush the top with egg wash. Use the tines of a fork to score the traditional Basque cross-hatch pattern across the surface. Bake at 350°F (175°C) for 40-45 minutes until deeply golden brown.
Beverage Pairing

Culinary Science Insight
Lipid Crystallization & Moisture Barrier
High butterfat content in the sablé dough forms a hydrophobic barrier upon contact with the heat of the oven, preventing the moisture of the pastry cream from turning the bottom crust soggy.
