Classic British Fish Pie (Luxury Smoked Haddock, Salmon, and Prawn Pie with Cheddar Mashed Potato Crust)
Succulent flakes of undyed smoked haddock, wild salmon, and plump king prawns enrobed in a velvety fresh herb velouté, crowned with piped golden sharp cheddar mashed potatoes.
History & Origins
Coastal Hearthside Tradition
Born along the rugged British seashores as a fisherman’s pie baked without pastry, this classic elevates coastal catches by infusing whole milk with smoked fish trimmings and aromatics before baking under furrowed mashed potatoes.
Ingredients
Seafood Selection & Infused Herb Velouté
- •1 lb Natural undyed smoked haddock fillet, skinless and cut into chunks
- •1 lb Skinless wild salmon fillet, cut into 1.5-inch cubes
- •8 oz Raw peeled king prawns, deveined
- •2.5 cups Whole milk infused with 1 bay leaf and 1 halved shallot
- •4 tbsp Unsalted English butter
- •1/4 cup All-purpose flour
- •1 tbsp Dijon mustard with a dash of Worcestershire sauce
Finishing, Garnishes & Chef’s Additions
- •2.5 lbs King Edward or Maris Piper potatoes, riced and mashed with butter
- •1 cup Extra-mature sharp cheddar cheese, freshly grated
- •3 large Hard-boiled free-range eggs, quartered lengthwise
- •3 tbsp Fresh flat-leaf parsley and fresh dill, finely chopped
Step-by-Step Instructions
PREPARATION & METHOD
Simmer whole milk with bay leaf, shallot, and black peppercorns. Lower heat, slide in smoked haddock and salmon for 3 minutes, then remove with a slotted spoon. Strain and reserve the infused poaching milk.
Melt butter in a saucepan, whisk in flour for 1 minute to create a blond roux, then gradually stream in the warm reserved poaching milk. Whisk until silky and bubbling. Season with Dijon mustard, lemon juice, chopped parsley, and dill.
Arrange flaked haddock, salmon, raw king prawns, and quartered hard-boiled eggs across a deep baking dish. Pour warm herb sauce evenly over seafood. Pipe or fork-swirl riced mashed potatoes on top, finishing with grated sharp cheddar.
Bake at 400°F (200°C) for 25 to 30 minutes until the sauce bubbles along the dish rims and the cheddar potato peaks turn deeply crisp and bronzed. Rest for 10 minutes before spooning onto plates.
Beverage Pairing
Chablis Premier Cru / Crisp English Sparkling Wine
A chalky mineral Chablis or brioche-scented English sparkling wine slices cleanly through rich cheddar mash and smoked haddock oils.

Protein Gentle Coagulation & Riced Starch Suspension
Poaching raw prawns directly inside the oven-baked sauce preserves delicate myosin proteins, while ricing potatoes prevents gummy gluey starches.
