History & Origins

Southern Vietnamese Imperial Banquet Craft

Known as Chả Giò in Southern Vietnam and Nem Rán in the North, these delicate rolls were served at royal festivities in the imperial citadel of Huế, distinguished by micro-thin rice paper that blisters into an ethereal, crackling crust upon frying.

Ingredients

Savory Pork Filling & Delicate Rice Paper

  • •1 lb Ground pork shoulder (80/20 lean to fat ratio)
  • •1/2 cup Dried wood ear mushrooms, rehydrated and finely shredded
  • •2 oz Bean thread glass noodles (mung bean vermicelli), soaked & snipped
  • •1 medium Carrot and 1/2 jicama, peeled and grated finely
  • •2 tbsp Minced shallots & 1 egg, beaten
  • •24 sheets Vietnamese rice paper (bánh tráng) for frying

Finishing, Garnishes & Chef’s Additions

  • •1/2 cup Nuoc cham (sweet, sour, and garlicky chili fish sauce)
  • •1 head Butter lettuce or green leaf lettuce leaves
  • •1 bunch Fresh spearmint, Thai basil, and cilantro sprigs
  • •High-heat oil Peanut or neutral oil for deep frying

Step-by-Step Instructions

Preparation & Method

1
Step 1: Mix & Season the Filling

Squeeze shredded jicama dry in a clean towel. In a large bowl, combine ground pork, mushrooms, glass noodles, carrots, jicama, shallots, egg, 1 tbsp fish sauce, sugar, and black pepper. Mix vigorously until tacky.

2
Step 2: Hydrate Rice Paper & Roll Tightly

Dip rice paper sheet briefly in warm water with 1 tsp sugar. Place flat on cutting board. Spoon 2 tbsp filling onto lower third, fold bottom over filling, tuck in sides snugly, and roll tightly upward. Rest rolls on a towel for 10 minutes to dry exterior.

3
Step 3: Double-Fry for Ultra-Crisp Skin

Heat oil to 325°F (165°C). Fry rolls in small uncrowded batches for 5-6 minutes until cooked through and pale blonde. Remove and drain. Increase oil temperature to 375°F (190°C), refry for 2-3 minutes until golden brown and blistered.

4
Step 4: Wrap in Lettuce & Dip in Nuoc Cham

Drain crispy rolls vertically on wire rack. Slice diagonally and serve with crisp lettuce cups, fresh mint, herbs, and bowls of tangy garlic-lime nuoc cham.

Beverage Pairing

Saigon Export Beer / Fresh Lime Iced Jasmine Tea

A crisp, effervescent Southeast Asian lager or chilled lime jasmine tea cuts through deep-fried pork richness and echoes the floral herbs.

Culinary Science Insight

Two-Stage Amylopectin Blistering

The initial moderate fry cooks pork moisture through without scorching the thin starch wrapper; the high-temperature second fry flash-vaporizes trapped surface water into thousands of shatteringly crisp micro-bubbles.
