Authentic Venetian Bigoli in Salsa (Traditional Whole-Wheat Bigoli with Anchovy & Onion Sauce)
Venice’s ancestral lean-day feast of extruded whole-wheat bigoli tossed in a deeply savory sauce of sweet white onions melted slowly into rich olive oil and cured anchovies.
History & Origins
Serenissima Tradition of Venetian Lean Days
Traditionally eaten on Christmas Eve, Ash Wednesday, and Good Friday in Venice, Bigoli in Salsa showcases the bronze-extruded rough whole-wheat pasta created during the 1604 Venetian Republic.
Ingredients

- •4 large Sweet white onions (preferably Chioggia white onions), paper-thinly sliced
- •3.5 oz (100g) High-quality salt-cured anchovy fillets, rinsed and drained
- •1/2 cup Extra virgin olive oil (fruity Veneto Valpolicella DOP)
Finishing, Garnishes & Chef’s Additions

- •1 pinch Freshly cracked black pepper (strictly no grated cheese)
Step-by-Step Instructions
PREPARATION & METHOD
Warm extra virgin olive oil in a wide sauté pan over very low heat. Add sliced onions with a splash of water, cooking for 25-30 minutes until melted and translucent without browning.
Add chopped anchovy fillets and white wine to the melted onions. Gently mash with a wooden spoon over low heat until the anchovies completely disintegrate into an unctuous emulsion.
Boil the bigoli in salted boiling water for 10-12 minutes until al dente. Reserve 1/2 cup of starchy pasta water before draining.
Toss hot bigoli into the onion-anchovy salsa with 3 tablespoons pasta water. Vigorously stir for 1 minute until every extruded ridge is coated in velvety umami sauce.
Beverage Pairing
Soave Classico / Lugana DOC
A volcanic, mineral-driven Garganega from Soave Classico delivers crisp acidity and almond notes that match salty cured anchovies.
Culinary Science Insight
Inosinic Acid Synergism & Extruded Porosity
Anchovy inosinate bonds with glutamate from sweet caramelized onions, amplifying perceived umami eightfold while porous bronze-drawn bigoli absorbs the oil emulsion.
