Authentic Turkish Zeytinyağlı Pırasa (Braised Leeks in Olive Oil with Carrots and Rice)
The quintessential Ottoman olive oil cold course: sweet thick-cut leeks and carrots slow-braised in Aegean extra virgin olive oil, freshly squeezed orange juice, and a scattering of tender Baldo rice until meltingly tender.
History & Origins
Ottoman Palace Zeytinyağlı Heritage
In classical Turkish cuisine, “Zeytinyağlılar” (vegetables cooked in olive oil) forms an esteemed culinary genre perfected in Topkapı Palace kitchens. Dishes in this category are cooked gently with olive oil, a touch of sugar, and citrus, then cooled completely to allow the vegetables to reabsorb the fragrant fruity oil before serving at room temperature.

Step-by-Step Instructions
PREPARATION & METHOD
Heat olive oil in a wide, shallow braising pan over medium heat. Add sliced carrots and cook for 3 minutes until oil takes on a subtle orange tint. Gently place diagonal leek cylinders in an even layer; sauté for 3 minutes without browning.
Scatter rinsed rice evenly over the leeks and carrots. Whisk together fresh orange juice, lemon juice, water, sugar, and salt; pour gently around the vegetables.
Bring liquid to a gentle boil, then place a round of parchment paper with a center steam hole directly over the vegetables and cover with the lid. Reduce heat to low and simmer undisturbed for 25 minutes until leeks are silken and rice has absorbed the juices.
Remove lid and let cool to room temperature in the pan. Transfer carefully to a serving platter, drizzle with raw extra virgin olive oil, and garnish generously with chopped fresh dill and lemon slices.
Beverage Pairing
Turkish Narince or Crisp Sauvignon Blanc
An indigenous Anatolian Narince white wine offers delicate floral notes, juicy green apple acidity, and a round mouthfeel that complements the citrus-braised leeks.
Culinary Science Insight
Ambient Oil Infusion During Retrogression
As braised vegetables and rice cool slowly in the cooking vessel, cell walls relax and contract, drawing aromatic olive oil polyphenols deep into the vegetable fibers, amplifying flavor concentration.
