History & Origins
Ottoman Imperial Palace Meze Tradition
Recorded in 19th-century Ottoman palace culinary manuscripts as a cooking technique rather than a single dish, ‘mücver’ originally referred to any egg-bound vegetable fritter. Over the generations, zucchini (kabak mücveri) became the undisputed master of Turkish meze tables from Istanbul to Izmir.

Step-by-Step Instructions
Preparation & Method
Toss grated zucchini with 1 teaspoon of salt in a colander and let rest for 15 minutes. Transfer zucchini to a clean kitchen towel or cheesecloth and wring forcefully over the sink with all your strength until not a single drop of liquid emerges.
In a large bowl, whisk beaten eggs with flour, baking powder, and black pepper until smooth. Fold in dry shredded zucchini, chopped dill, mint, scallions, and crumbled feta cheese until an herb-dense, spoonable batter forms.
Heat 1/4 inch of oil in a heavy skillet over medium-high heat until shimmering. Drop rounded mounds (approx. 2 tablespoons each) into the hot oil, flattening slightly with the back of a spoon. Fry for 3 minutes per side until deeply golden and crispy; drain on paper towels.
Whisk thick strained yogurt with crushed garlic and sea salt. Swirl warm pul biber olive oil over the top. Arrange the hot, crispy mücver on a serving platter and serve immediately with the cold dipping yogurt.
