History & Origins
Ottoman Palace Tradition: ‘Split Belly’ Aubergine
Translating literally to ‘split belly’ in Turkish, Karnıyarık originated in the grand Ottoman palace kitchens of Topkapı, representing the meaty counterpart to the vegetarian olive oil classic İmam Bayıldı.
Ingredients
Zebra Eggplants & Spiced Ground Beef Filling
- •4 medium Italian or Turkish eggplants, peeled in lengthwise zebra stripes
- •3/4 lb Ground beef chuck (or 85/15 ground beef/lamb mix)
- •1 large Yellow onion, finely chopped
- •2 cloves Fresh garlic, minced & 1/2 cup olive oil for shallow frying
- •2 medium Ripe Roma tomatoes, peeled and finely diced
- •1 tsp Aleppo pepper (pul biber), 1/2 tsp cumin, and salt
Finishing, Garnishes & Chef’s Additions
- •4 whole Turkish green sivri peppers (or Anaheim/banana peppers)
- •4 slices Fresh tomato wedges, for topping
- •1.5 tbsp Turkish tomato paste (salça) diluted in 1 cup hot water
- •1/4 cup Fresh flat-leaf parsley, finely chopped
Step-by-Step Instructions
Preparation & Method
Soak zebra-peeled eggplants in salted water for 20 minutes, then pat completely dry. Shallow-fry in olive oil over medium heat for 10-12 minutes, turning until flesh is soft and golden brown. Drain on paper towels.
In a skillet, sauté chopped onions in 2 tbsp olive oil until translucent. Add ground beef and garlic, cooking for 6 minutes until browned. Stir in diced tomatoes, Aleppo pepper, cumin, salt, and parsley, simmering until juices reduce.
Place fried eggplants in a baking dish. Cut a deep lengthwise slit down the center of each, leaving ends intact. Press flesh open with two spoons to create a boat. Fill each eggplant generously with spiced meat filling.
Top each stuffed eggplant with a green pepper and tomato slice. Pour warm diluted salça broth into the base of the dish. Bake at 375°F (190°C) for 25-30 minutes until peppers blister and sauce is rich and glossy.
Beverage Pairing
Turkish Öküzgözü Red Wine / Fresh Chilled Ayran
The lively red plum and sour cherry notes of indigenous Anatolian Öküzgözü or salted frothy yogurt ayran balance roasted eggplant depth.
Culinary Science Insight
Eggplant Parenchyma Sponging & Degorging
Salting eggplant collapses cellular air pockets before cooking, preventing the spongy parenchyma from absorbing excess frying oil while accelerating thermal tenderization.
