Authentic Turkish Barbunya Pilaki (Pinto Beans Braised in Olive Oil with Carrots, Garlic, and Parsley)
A classic Turkish zeytinyağlı (olive oil dish) featuring tender borlotti beans slow-braised with sweet carrots, whole garlic cloves, and diced potatoes in fruity extra virgin olive oil, served at room temperature with lemon and parsley.
History & Origins
The Jewel of Ottoman Zeytinyağlı Meze
Pilaki is an ancient cooking genre of Ottoman and Istanbul Greek-Levantine tradition. The term designates legumes or fish braised gently with generous Aegean olive oil, carrots, and onions, meant to be eaten chilled or at room temperature.
Ingredients
Borlotti Beans & Olive Oil Braise Base
- •1 lb Fresh or soaked dried Borlotti beans (or two 15 oz cans, rinsed and drained)
- •1/3 cup Turkish cold-pressed extra virgin olive oil
- •2 medium Carrots, peeled and cut into diagonal 1/4-inch coins
- •1 medium Russet potato, peeled and cut into 1/2-inch cubes
- •1 large Sweet yellow onion, finely diced
- •6 cloves Fresh garlic, peeled and left whole or halved
- •1 tbsp Tomato paste and 1 tsp granulated sugar
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Fresh flat-leaf Italian parsley, coarsely chopped
- •1 fresh Lemon, cut into thin wheels and wedges for squeezing
- •2 tbsp Extra virgin olive oil for finishing drizzle
- •1 loaf Crusty Turkish pide or sourdough bread for dipping
Step-by-Step Instructions
PREPARATION & METHOD
Warm extra virgin olive oil in a wide, heavy saucepan over medium-low heat. Add diced onions and cook gently for 6-8 minutes until soft and translucent without browning. Add whole garlic cloves and sliced carrots, cooking for another 4 minutes.
Stir in tomato paste and sugar, cooking for 1 minute until fragrant. Sugar is an essential Ottoman touch that balances tomato acidity and enhances the natural sweetness of carrots and olive oil.
Add drained Borlotti beans and cubed potatoes. Pour in 1.5 cups of warm water and 1 teaspoon of sea salt. Bring to a boil, reduce heat to low, cover with a lid, and simmer gently for 25-30 minutes until carrots and potatoes are tender and sauce is glossy.
Remove from heat and allow the dish to cool completely to room temperature in the pan so the beans absorb the olive oil emulsion. Transfer to a serving platter, scatter generously with fresh chopped parsley, squeeze lemon juice, and drizzle extra olive oil.
Beverage Pairing
Turkish Rakı / Mineral Aegean White Wine (Narince)
Aniseed-scented Turkish Rakı with water and ice or a crisp Narince white wine provides the classic meze table harmony.
Culinary Science Insight
Retrogradation & Lipid Diffusion at Ambient Temp
Zeytinyağlı dishes undergo flavor deepening as they cool: bean starches undergo slight retrogradation, trapping the mono-unsaturated fatty acids of the olive oil within the skin membrane for a silkier mouthfeel.
