History & Origins
Siam Royal Palace & Summer Harvest Tradition
Created during the late Ayutthaya and early Rattanakosin periods, Khao Niew Mamuang celebrates the peak summer harvest of fragrant Nam Dok Mai and Ok-Rong mangoes, complemented by glutinous rice soaked in freshly pressed coconut milk.
Ingredients
Steamed Glutinous Rice & Coconut Infusion
- •1 1/2 cups Thai long-grain glutinous sweet rice (Khao Niew), soaked for 4 hours
- •1 1/4 cups Premium full-fat coconut milk (first press /หัวกะทิ)
- •1/2 cup Granulated palm sugar or white sugar
- •3 leaves Fresh pandan leaves, tied in a knot
- •1/2 tsp Fine sea salt (essential for salty-sweet contrast)
Finishing, Garnishes & Chef’s Additions
- •2 large Ripe Thai honey mangoes (Nam Dok Mai or Champagne mangoes), peeled and sliced
- •1/2 cup Thick salted coconut cream sauce (coconut cream simmered with 1/2 tsp rice flour and salt)
- •2 tbsp Crispy toasted yellow split mung beans (thua thong) for crunch
Step-by-Step Instructions
PREPARATION & METHOD
Rinse sticky rice until water runs clear, then soak in water for 4 hours. Drain and line a bamboo or cheesecloth steamer. Steam over rolling boiling water with knotted pandan leaves for 25 minutes until translucent and tender.
While rice steams, combine coconut milk, sugar, and sea salt in a small saucepan over medium-low heat. Stir until sugar dissolves completely without allowing coconut milk to boil and separate. Keep warm.
Transfer steaming-hot cooked rice immediately to a heatproof bowl. Pour warm coconut syrup over rice, stir gently with a spatula, cover tightly with a lid, and let rest undisturbed for 20 minutes until coconut cream is fully absorbed into glossy, plump grains.
Fan sliced ripe honey mango across ceramic serving plates. Mold warm coconut sticky rice alongside. Drizzle rice with salted coconut topping and scatter toasted yellow mung beans over top.
Beverage Pairing
Iced Thai Milk Tea (Cha Yen) or Lemongrass Pandan Tea
A glass of aromatic cold-brewed lemongrass pandan tea refreshes the palate, while spiced black Thai iced tea matches the rich coconut fats and sweet floral mango.
Culinary Science Insight
Amylopectin Gelatinization & Capillary Syrup Absorption
Glutinous rice consists of nearly 100% branched amylopectin starch. Pouring warm coconut syrup over freshly steamed, expanded starch granules draws lipid molecules deep into the core via capillary suction.
