Authentic Syrian Muhammara (Roasted Red Pepper and Walnut Dip with Pomegranate Molasses)
A luxurious, coarsely ground Aleppine dip of sweet charred red peppers, buttery toasted walnuts, tart pomegranate molasses, and smoky Aleppo pepper flakes.
History & Origins
The Silk Road Culinary Masterpiece of Aleppo
Originating in Aleppo, Syria—the historic culinary nexus of the Levant—Muhammara (meaning ‘reddened’) balances sweet roasted bell peppers, nutty mountain walnuts, and tangy reduced pomegranate juice with gentle Aleppo pepper warmth.
Ingredients
Roasted Pepper & Walnut Base
- •3 large Fire-roasted red bell peppers, peeled, seeded, and drained
- •1.5 cups Raw walnut halves, lightly toasted and cooled
- •1/2 cup Plain breadcrumbs or crushed pita rusks
- •3 tbsp Authentic tart pomegranate molasses (dibs ruman)
- •1.5 tbsp Aleppo pepper flakes (pul biber) and 1 tsp ground cumin
- •1/3 cup Robust extra virgin olive oil and 2 cloves garlic
Finishing, Garnishes & Chef’s Additions
- •2 tbsp Extra virgin olive oil for shallow well drizzling
- •3 tbsp Fresh ruby red pomegranate arils
- •1/4 cup Lightly crushed toasted walnuts and fresh mint leaves
- •1 basket Warm freshly baked Lebanese pita bread
Step-by-Step Instructions
Preparation & Method
Toast walnuts in a dry skillet over medium heat for 4 minutes until golden and fragrant. Ensure roasted red peppers are thoroughly patted dry with paper towels to prevent excess moisture from diluting the dip texture.
In a food processor, pulse toasted walnuts, breadcrumbs, garlic cloves, Aleppo pepper flakes, cumin, and sea salt until finely and evenly crumbled but not pureed into a butter paste.
Add roasted red peppers and pomegranate molasses to the bowl. Pulse repeatedly while slowly drizzling in olive oil until a luscious, textured, thick paste forms that easily holds its shape on a spoon.
Spread Muhammara across a wide ceramic mezze dish with the back of a spoon to create concentric ridges. Pool extra virgin olive oil in the grooves, scatter pomegranate arils and toasted walnuts on top, and serve with warm pita.
Beverage Pairing
Lebanese Ksara Sunset Rosé or Arak with Water
A dry Bekaa Valley Mediterranean rosé or traditional anised Arak diluted with iced water refreshes the palate between bites of oily toasted walnuts and sweet pomegranate.
Culinary Science Insight
Polyphenol Bitterness Masking & Lipid Emulsion
Walnut skins contain astringent tannins; pairing them with fructose and citric acid from pomegranate molasses while emulsifying with oleic acid olive oil neutralizes astringency and creates a silky mouthfeel.
