Authentic Spanish Suquet de Peix (Catalan Fisherman’s Fish and Potato Stew with Almond Picada)
A classic Costa Brava Catalan fisherman’s stew of tender monkfish and head-on prawns simmered with saffron potatoes, thickened with an aromatic mortar-ground picada of toasted almonds, fried bread, and garlic.
History & Origins
The Quintessential Catalan Coastal Caldillo
Suquet, derived from ‘suquejar’ (to release juice), was created by Catalan fishing crews on their boats who cooked the day’s firm white catch with humble potatoes, enriched by Catalonia’s historic secret weapon: the picada.
Ingredients
Mediterranean Seafood & Sofrito Core
- •1.5 lbs Monkfish (rape) or firm hake fillets, cut into large medallions
- •8 whole Fresh head-on Mediterranean red prawns (gambas)
- •1.5 lbs Yukon Gold potatoes, peeled and cracked (chascadas) into bite-sized chunks
- •4 cups Rich homemade fish stock (fumet de peix)
- •1 large Yellow onion, grated or finely minced
- •2 ripe Tomatoes, halved and grated, discarding skins
- •1 tsp Spanish sweet pimentón de la Vera and a pinch of saffron threads
Finishing, Garnishes & Chef’s Additions
- •12 whole Marcona almonds, toasted until golden
- •1 slice Day-old rustic bread, fried crisp in olive oil
- •2 cloves Fresh garlic and 2 tbsp fresh Italian parsley leaves
- •1 bowl Homemade garlicky Catalan allioli for dolloping
Step-by-Step Instructions
PREPARATION & METHOD
Heat olive oil in a wide clay cazuela. Sear prawns for 1 minute per side to infuse red shell oil into the base; set aside. In the same oil, slowly caramelize grated onion for 12 minutes, then stir in grated tomato and pimentón until thick and jammy.
Snap potato chunks with a knife so they release natural starch. Toss potatoes into the sofrito, add bloomed saffron and hot fish fumet. Simmer uncovered over medium heat for 15 minutes until potatoes are nearly tender.
In a stone mortar, crush garlic cloves, toasted almonds, fried bread, and parsley with a pinch of coarse sea salt into a fine thick paste. Loosen with two spoonfuls of hot simmering fish broth.
Nestle seasoned monkfish medallions and seared prawns among potatoes. Stir the loosened picada smoothly into broth. Gently simmer for 6 minutes until fish is pearlescent and broth thickens into a glossy liaison.
Beverage Pairing
Crisp Penedès Xarel·lo / Mineral Spanish Albariño
A bone-dry Catalan Xarel·lo or Galician Albariño brings vibrant citrus minerality that balances the rich, nut-thickened seafood broth.
Culinary Science Insight
Amylose Starch Gelatinization & Almond Emulsification
Snapping potatoes rather than slicing cleanly ruptures cell walls, leaching amylose into the broth, while ground almond lipids act as a natural emulsifier to suspend cooking oils in aromatic broth.
