History & Origins

Catalan Lyric Opera of the Sea

Named after the traditional Spanish theatrical operetta (“Zarzuela”) for its dramatic variety of seafood and harmonious flavors, this dish originated along the Costa Brava, distinguished from French bouillabaisse by the crucial addition of a Catalan picada.

Ingredients

Fresh Mediterranean Fish, Shellfish & Sofrito

  • •1.5 lbs (700g) Monkfish or firm white fish fillets (halibut/cod), cut into large chunks
  • •12 large Head-on jumbo prawns or shrimp
  • •1 lb Fresh blue mussels and Manila clams, scrubbed and debearded
  • •1/2 lb Cleaned squid tubes and tentacles, sliced into rings
  • •1 large Onion, finely diced, and 2 ripe tomatoes, grated
  • •1/4 cup Spanish brandy and 1/2 cup dry white wine
  • •2.5 cups Rich homemade seafood stock infused with a generous pinch of saffron

Finishing, Garnishes & Chef’s Additions

  • •1 batch Catalan Picada (toasted almonds, fried bread, garlic, parsley, and saffron ground in a mortar)
  • •1/4 cup Fresh flat-leaf parsley, chopped
  • •Fresh Lemon wedges and grilled rustic pan con tomate for dipping

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Sear Prawns and Fish Chunks

Heat 3 tablespoons olive oil in a wide cazuela or paella pan. Sear jumbo prawns for 1 minute per side until bright coral; transfer to a plate. Lightly flour monkfish chunks and sear for 2 minutes until lightly golden; set aside with prawns.

2
Step 2: Build Sofrito and Flambé Brandy

Add diced onions to the fragrant oil, cooking slowly for 10 minutes until deep golden brown. Stir in grated tomatoes and squid rings for 4 minutes. Pour in Spanish brandy and carefully flambé with a long match to burn off alcohol. Pour in white wine and reduce by half.

3
Step 3: Simmer Seafood and Shellfish

Pour in saffron-infused seafood stock and bring to a simmer. Arrange monkfish pieces, scrubbed mussels, and clams evenly across the pan. Cover and cook on medium-low for 5 to 6 minutes until mussel shells pop wide open.

4
Step 4: Stir in Picada and Thicken

Stir a few spoonfuls of hot broth into the mortar with the ground almond picada, then gently swirl the picada paste into the bubbling stew. Return prawns to the top and simmer uncovered for 3 minutes until broth turns glossy, fragrant, and velvety. Garnish with parsley.

Beverage Pairing

Catalan Cava Brut Nature or Penedès White

A bone-dry, sparkling Catalan Cava provides crisp effervescence and green apple acidity that lifts the nutty almond picada and cuts through rich shellfish broth.

Culinary Science Insight

Picada Emulsion Binding & High-Heat Flambéing

Flambéing brandy quickly vaporizes raw ethanol while depositing charred caramel esters. Ground toasted almonds in the picada release monounsaturated fats that physically bind the broth into a stable emulsion without heavy dairy.
