History & Origins

Galicia’s Legendary Way of St. James Pilgrim Feast

Documented since 12th-century stone carvings at the Cathedral of Santiago de Compostela, this Celtic-influenced pie was portable nourishment for medieval pilgrims crossing northwest Spain, utilizing Galicia’s abundant Atlantic seafood.

Ingredients

Olive Oil Yeast Dough & Rich Sofrito Filling

  • •3 cups Unbleached all-purpose flour & 1 tsp instant yeast
  • •1/2 cup Spanish extra virgin olive oil (strained from sofrito)
  • •2 large Sweet Spanish onions, finely chopped
  • •2 whole Red bell peppers, cored and thinly sliced
  • •1 tbsp Sweet smoked Spanish paprika (Pimentón de la Vera)
  • •1/2 cup Crushed San Marzano tomatoes and fine sea salt

Finishing, Garnishes & Chef’s Additions

  • •12 oz Bonito del Norte (Spanish white tuna in olive oil), flaked
  • •2 whole Hard-boiled eggs, peeled and finely chopped
  • •1 large Egg, whisked with 1 tbsp water for golden wash
  • •1 pinch Flaky sea salt, for crust finish

Step-by-Step Instructions

Preparation & Method

1
Step 1: Cook Fragrant Sofrito & Strain Oil

Heat olive oil in a skillet over medium-low heat. Cook sweet onions and bell peppers slowly for 20 minutes until sweet and tender. Stir in paprika and crushed tomatoes for 5 minutes. Strain through a fine sieve, saving flavored oil for dough.

2
Step 2: Knead Sofrito Olive Oil Dough

In a large bowl, whisk flour, yeast, and salt. Pour in lukewarm water and 1/2 cup of reserved sofrito oil. Knead for 7 minutes until silky and elastic. Cover with towel and rest 30 minutes.

3
Step 3: Roll, Fill & Decoratively Seal Crust

Roll half the dough out onto baking sheet. Fold flaked bonito tuna and chopped boiled eggs into cooled sofrito, spreading evenly over crust. Roll top dough over filling, crimp edges into decorative rope twists, and cut a round vent in center.

4
Step 4: Egg Wash & Bake to Deep Mahogany Gold

Brush crust liberally with egg wash and sprinkle with flaky sea salt. Bake at 390°F (200°C) for 35-40 minutes until deeply bronzed and fragrant. Cool on rack for 15 minutes before slicing.

Beverage Pairing

Galician Albariño (Rías Baixas) / Dry Mencía

Crisp, saline Albariño from the Galician coast mirrors the Atlantic tuna and balances sweet caramelized onions with zesty green apple acidity.

Culinary Science Insight

Oleic Acid Shortening of Wheat Gluten

Using sofrito-strained warm olive oil in the yeast dough coats glutenin proteins with monounsaturated lipids, yielding a tender, crumbly, yet sturdy pastry structure.
