Authentic Singaporean Chili Crab
Fresh sweet mud crab cracked and stir-fried in a rich, tangy, savory-sweet chili and tomato gravy thickened with delicate ribbons of beaten egg.
History & Origins
The Crown Jewel of East Coast Seafood
Invented in 1956 by Cher Yam Tian from a pushcart along the Kallang River, Singaporean Chili Crab evolved into Singapore’s supreme national culinary icon. The signature dish combines fiery fresh red chilies with tomato paste and rich egg ribbons to balance heat, acidity, and succulent crustacean sweetness.

- •2 cups Rich unsalted seafood or chicken stock
Finishing, Garnishes & Chef’s Additions
- •2 large Farm-fresh eggs, lightly whisked
- •1.5 tbsp Cornstarch dissolved in 2 tbsp cold water (cornstarch slurry)
- •8 pieces Deep-fried golden Chinese mantou buns for dipping
- •1/3 cup Fresh coriander sprigs and scallion slivers
Step-by-Step Instructions
Preparation & Method
Blend red chilies, shallots, garlic, and ginger into a fine aromatic spice paste. Scrub crabs, remove gills and apron, chop bodies into quarters, and crack heavy claws lightly with the back of a cleaver to allow sauce penetration.
Heat 4 tablespoons peanut oil in a massive wok over medium-high heat. Fry spice paste until intensely fragrant and oil separates. Add tomato paste blend, chicken stock, and crab pieces. Cover tightly with a wok lid and steam-simmer for 8–10 minutes until shells turn bright vermilion.
Uncover wok, stir in cornstarch slurry, and simmer for 60 seconds until gravy turns glossy and clings to shells. Turn heat to low, slowly drizzle beaten eggs in a circular motion, and let set for 10 seconds before gently folding into silky ribbons.
Mound steaming crab pieces on a large shallow platter and ladle over the luscious egg ribbon chili sauce. Garnish with cilantro and serve immediately alongside hot, crispy fried mantou buns to mop up every drop of gravy.
Beverage Pairing
Crisp Tiger Beer / Off-Dry German Riesling
An ice-cold pale lager cleanses chili heat, while an off-dry Mosel Riesling provides lush stone fruit sweetness and racy acidity to match sweet crab and tomato tang.
Culinary Science Insight
Starch Retrogradation & Egg Suspension
Pre-thickening with gelatinized cornstarch stabilizes sauce viscosity, allowing gently swirled egg whites and yolks to form soft suspended curtains rather than curdling.
