Step-by-Step Instructions
PREPARATION & METHOD
Melt 1 tablespoon butter in a skillet over medium heat. Sauté chopped onion and roasted diced poblano peppers for 4 minutes until tender. Add minced garlic and tomatoes, cooking for another 3 minutes until liquids reduce slightly.
Add chopped shrimp pieces, 1/2 teaspoon kosher salt, and freshly cracked black pepper. Sauté rapidly for 2 to 3 minutes just until shrimp turn pink and opaque. Remove immediately from the pan so they remain tender and succulent.
Preheat a comal or cast-iron skillet over medium heat with a light wipe of butter. Lay corn tortillas flat and cover each entirely with a generous layer of shredded Oaxaca cheese. Let the cheese begin melting into the warming tortilla.
Spoon the warm shrimp and poblano filling over one half of each cheesy tortilla. Fold into half-moons and press gently with a spatula. Cook 2 minutes per side until the tortilla exterior is golden crisp and cheese forms toasted edges. Serve with chipotle mayo and avocado.
Beverage Pairing
Sinaloan Pacifico Clara with Lime or Clamato Michelada
Brewed in Mazatlán, a frosty Pacifico pilsner with fresh lime matches the coastal origin and cuts through melted cheese and buttery roasted poblanos.
Culinary Science Insight
Pasta Filata Melting & Tortilla Dehydration Crisp
Oaxaca cheese is a stretched-curd (pasta filata) cheese with aligned protein strands that melt into an elastic seal. When griddled in butter, surface moisture evaporates from the tortilla, causing nixtamalized starches to fry into a shatteringly crisp barrier.
