Authentic Portuguese Polvo à Lagareiro (Roasted Octopus with Smashed Olive Oil Potatoes)
Portugal’s most celebrated coastal feast: tender simmered whole octopus tentacles roasted at high heat alongside skin-on smashed potatoes (batatas a murro), bathed in a golden lake of fruity extra virgin olive oil, sweet roasted garlic, and bay leaves.
History & Origins
The Portuguese Olive Mill Heritage
The term ‘à Lagareiro’ honors the historic olive oil press masters (lagareiros) of central Portugal. During autumn harvest, fresh extra virgin olive oil was celebrated by drowning tender baked seafood and hearth-roasted smashed potatoes in unsparing amounts of warm golden oil.
Ingredients
Tender Octopus & Simmering Pot
- •3.5 lbs (1.6kg) Whole octopus, cleaned (previously frozen ensures natural tenderness)
- •1 large Whole yellow onion (skin on) and 3 dried Portuguese bay leaves
- •1.5 lbs (700g) Small whole Yukon Gold or red baby potatoes (for batatas a murro)
Finishing, Garnishes & Chef’s Additions
- •1 cup (240ml) Premium Portuguese extra virgin olive oil (fruity Douro or Alentejo)
- •1 whole head Fresh garlic, cloves separated and gently crushed with skins on
- •1/4 cup Fresh Italian flat-leaf parsley, coarsely chopped
- •Coarse salt Sal de Tavira sea salt for roasting potatoes
Step-by-Step Instructions
PREPARATION & METHOD
Place octopus in a large dry pot with the whole unpeeled onion and bay leaves (no water needed; octopus releases its own broth). Cover tightly and simmer over low heat for 45-55 minutes until a knife slips easily into the thickest tentacle.
Toss whole baby potatoes in coarse sea salt and roast at 400°F (200°C) for 35 minutes until tender. Wrap each potato in a kitchen towel and gently crush with your fist (a murro) to burst the skins open.
Cut octopus into large individual tentacles. Arrange tentacles and burst potatoes in a large earthenware baking dish. Scatter crushed garlic cloves and bay leaves over top, then generously drench everything with 1 cup extra virgin olive oil.
Roast at 425°F (220°C) for 20-25 minutes until the octopus tentacle tips crisp and char lightly while garlic softens into sweet gold. Shower with fresh parsley and serve directly from the sizzling baking dish with crusty bread.
Beverage Pairing
Vinho Verde Alvarinho / Dão Tinto
A crisp, saline Portuguese Alvarinho cuts through warm olive oil, while a light-bodied elegant Dão red wine pairs harmoniously with roasted garlic and octopus tentacles.
Culinary Science Insight
Collagen Gelatinization & Confit-Style Roasting
Octopus contains five times the collagen of fish. Initial low-temperature simmering breaks down tough connective tissue into gelatin. In the oven, submerging tentacles in abundant olive oil acts as a confit medium, preventing surface drying while allowing tips to crisp.
