Authentic Portuguese Caldeirada de Peixe (Traditional Fisherman’s Layered Fish and Potato Stew)
Portugal’s ancestral Atlantic fisherman’s stew of layered mixed white fish, tender squid, sliced potatoes, onions, and sweet peppers gently poached in white wine and olive oil.
History & Origins
Maritime Heritage of Peniche, Nazaré and the Algarve
Developed aboard Atlantic fishing boats along Portugal’s coast, fishermen cooked unsellable varieties of firm and delicate catch in a heavy copper pot without stirring to preserve intact fish fillets.

- •2 large Yellow onions, sliced into rounds
- •1 red & 1 green Bell pepper, seeded and sliced into rings
- •4 ripe Roma tomatoes, peeled and thickly sliced
Finishing, Garnishes & Chef’s Additions
- •1 cup Crisp dry Portuguese white wine (Vinho Verde or Douro Branco)
- •1/2 cup Portuguese extra virgin olive oil
- •1/2 cup Fresh cilantro, coarsely chopped and 2 dried bay leaves
Step-by-Step Instructions
PREPARATION & METHOD
Coat bottom of a heavy Dutch oven with olive oil. Lay down half the sliced onions, garlic, peppers, potatoes, and sliced tomatoes, seasoning with paprika and salt.
Place seasoned fish fillets and squid rings over the potato base. Cover with the remaining potatoes, bell peppers, tomatoes, onions, bay leaves, and fresh parsley.
Pour white wine and remaining olive oil over the top. Cover tightly with the lid. Bring to a boil, then reduce heat to medium-low and simmer undisturbed for 30 minutes without stirring.
Gently swirl the pot by the handles to mingle the fragrant cooking juices without breaking the fish. Scatter fresh cilantro over top and serve directly over crusty bread.
Beverage Pairing
Vinho Verde Alvarinho / Dão Branco
An estate-bottled Alvarinho from Monção e Melgaço brings crisp salinity and mineral structure that illuminates fresh Atlantic sea bass.
Culinary Science Insight
Thermal Layer Stratification & Gelatin Syneresis
Stout potato discs insulate fish proteins from scorching heat while potato amylose absorbs fish gelatins, transforming thin wine broth into a naturally rich, cohesive sauce.
