History & Origins

Lima’s 19th Century Chifa Melting Pot

Emerging from Chinese Cantonese immigrants who arrived in Peru in the late 1800s, Lomo Saltado blends traditional Cantonese wok flaring (“saltado”) with native Andean ingredients like Peruvian potatoes and fruity ají amarillo chiles.

Ingredients

Flamed Tenderloin & Chifa Aromatics

  • •1.5 lbs (700g) Beef tenderloin (lomo fino) or sirloin steak, cut into 1/2-inch thick strips
  • •1 large Red onion, sliced into thick wedges
  • •2 medium Plum tomatoes, seeded and cut into thick wedges
  • •1 fresh Peruvian ají amarillo chile pepper, seeded and julienned
  • •3 tbsp Premium soy sauce (sillao)
  • •2 tbsp Red wine vinegar and 1 tbsp oyster sauce
  • •3 cloves Fresh garlic, minced, and 1 tsp grated fresh ginger

Finishing, Garnishes & Chef’s Additions

  • •3 cups Thick hand-cut french fries (papas fritas), fried golden crisp
  • •1/4 cup Fresh cilantro leaves, coarsely chopped
  • •Warm Fluffy white garlic rice (arroz blanco) for essential dual-starch pairing

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Smoke-Sear Beef in Batches

Heat 2 tablespoons oil in a heavy carbon-steel wok over maximum heat until smoking hot. Working in small batches, add beef strips in a single layer. Sear without stirring for 60 seconds, then toss vigorously for 1 minute until deeply browned and caramelized. Transfer to a bowl.

2
Step 2: Wok-Toss Onions and Chiles

Add another tablespoon of oil to the screaming-hot wok. Add red onion wedges and julienned ají amarillo. Stir-fry rapidly for 90 seconds until edges show char marks but the onions remain crisp and crunchy. Stir in garlic and ginger for 30 seconds.

3
Step 3: Deglaze with Vinegar and Soy Glaze

Return seared beef and juices to wok, add tomato wedges, and immediately pour red wine vinegar, soy sauce, and oyster sauce around the hot wok perimeter. The liquid will vaporize with a sizzling hiss; toss continuously for 60 seconds.

4
Step 4: Fold Crispy Fries and Cilantro

Remove from heat. Add hot, freshly fried crispy french fries and chopped cilantro. Toss quickly so fries drink up just enough savory pan juices while retaining their crunch. Plate alongside a mound of fluffy white rice.

Beverage Pairing

Classic Pisco Sour or Chicha Morada

A frothy Peruvian Pisco Sour with lime acid or sweet spiced purple corn Chicha Morada offsets wok-charred smokiness and savory soy umami.
