Ingredients

Saffron Braised Chicken & Rice Core

  • •2.5 lbs Bone-in skinless chicken thighs
  • •2.5 cups Aged Persian long-grain basmati rice, soaked in salted water
  • •1 large Yellow onion, finely diced
  • •3 tbsp High-grade Persian saffron threads, bloomed in 1/4 cup hot water
  • •2 tbsp Tomato paste and 1 tbsp fresh lemon juice
  • •1 tsp Ground turmeric, 1/2 tsp ground cumin, 1 tsp sea salt
  • •3 tbsp Clarified butter (ghee) or vegetable oil

Finishing, Garnishes & Chef’s Additions

  • •3/4 cup Dried Persian barberries (zereshk), rinsed and drained
  • •2 tbsp Unsalted butter and 1 tbsp granulated sugar
  • •1 tbsp Pure Persian rose water
  • •3 tbsp Slivered raw pistachios and 2 tbsp slivered almonds

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Braise Saffron Chicken

Sauté onions in ghee until translucent. Add chicken thighs and season with turmeric, cumin, and salt. Stir in tomato paste, lemon juice, half the bloomed saffron water, and 1 cup water; simmer covered for 40 minutes.

2
Step 2: Parboil & Steam Basmati

Parboil soaked basmati rice in heavily salted boiling water for 6-7 minutes until grains are tender outside with slight bite; drain. Steam over low heat in a covered pot wrapped in a damkoni towel for 30 minutes.

3
Step 3: Glaze Tart Barberries

Melt butter in a small pan over gentle low heat. Add rinsed barberries, sugar, rose water, and 1 tbsp saffron water. Sauté gently for 60-90 seconds until plump and ruby-bright (do not burn).

4
Step 4: Plate Jewel-Rice Display

Toss 1 cup of steamed white rice with remaining saffron water to turn golden yellow. Layer fluffy white rice on a serving platter, crown with saffron rice, glazed barberries, pistachios, and almonds, and flank with braised chicken.

Beverage Pairing

Crocetin Pigment Blooming & Barberry Sugar Glazing

Steeping crushed saffron in warm water extracts water-soluble carotenoid crocin pigments, while a brief flash-sauté with sugar coats barberry citric acids in a glossy, protective caramel glaze.
