History & Origins
National Dish of Palestine
Hailing from the olive-rich hills of Jenin and Tulkarm, Musakhan is celebrated every autumn during the olive pressing season. The communal dish honors Palestine’s terroir with generous amounts of newly pressed olive oil and tangy wild sumac berries.
Ingredients
Spiced Roast Chicken & Sumac Onions
- •1 whole (approx 3.5 lbs) Chicken, quartered or halved
- •5 large Yellow or red sweet onions, finely chopped or diced
- •3/4 cup Authentic extra virgin Palestinian olive oil
- •1/3 cup High-grade ruby-red tart sumac, freshly ground
- •1 tsp Ground allspice, 1/2 tsp ground cinnamon, and 1/2 tsp cardamom
- •4 large loaves Traditional stone-baked taboon flatbread (or thick fluffy pita)
Finishing, Garnishes & Chef’s Additions
- •1/3 cup Pine nuts or slivered almonds, pan-toasted in olive oil until golden
- •1/4 cup Fresh Italian flat-leaf parsley leaves, coarsely chopped
- •1 bowl Thick Greek yogurt or labneh seasoned with minced garlic and cucumber
- •1 tbsp Extra sumac dusted over the assembled platter prior to serving
Step-by-Step Instructions
PREPARATION & METHOD
Rub chicken pieces thoroughly with olive oil, allspice, cinnamon, cardamom, salt, black pepper, and 2 tablespoons of sumac. Roast in a 400°F (200°C) oven for 45 minutes until juices run clear and skin is richly browned.
Heat olive oil in a wide pot over medium-low heat. Add chopped onions with a pinch of salt. Cook gently for 30 minutes until soft, translucent, and jammy. Stir in remaining sumac until onions turn deep magenta.
Dip taboon flatbread into the warm fragrant onion olive oil. Place bread onto a baking sheet, spread a thick layer of sumac onions over the bread, and broil for 2-3 minutes until edges turn toasted and crisp.
Stack onion-drenched bread on a large serving platter. Arrange roasted chicken pieces on top, shower generously with toasted pine nuts, fresh chopped parsley, and extra sumac. Serve communally with labneh.
Beverage Pairing
Mint Lemonade (Limonana) / Grenache
A crushed ice Limonana cuts through lush extra virgin olive oil, while a juicy Mediterranean Grenache complements tart fruity sumac.
Culinary Science Insight
Malic Acid Extraction & Lipidic Emulsion
Sumac berries contain high concentrations of organic malic and citric acids; stewing them into low-temperature olive oil extracts tangy tannins that balance sweet caramelized onion sugars.
