History & Origins

Chef Jorge Siqueff’s Motul Creation

Created in the 1920s by chef Jorge Siqueff in the town of Motul, Yucatán, for state governor Felipe Carrillo Puerto and international dignitaries. Siqueff layered traditional Mayan black beans and corn tortillas with Mediterranean-influenced ham and peas, forming an unforgettable sweet-savory harmony.

Ingredients

Tortillas, Beans & Farm Eggs

  • •8 fresh Corn tortillas, lightly crisped in lard or oil
  • •1 1/2 cups Refried Yucatecan black beans (frijoles colados), warm
  • •8 large Pasture-raised farm eggs
  • •Chiltomate Salsa: 1 1/2 lbs roasted Roma tomatoes, 1 charred habanero chile (whole), 1/2 white onion, and 2 garlic cloves pureed and simmered in lard
  • •3 tbsp Pure lard or vegetable oil, for frying

Finishing, Garnishes & Chef’s Additions

  • •3/4 cup Smoked cooked ham, cut into small 1/4-inch dice
  • •1/2 cup Petite sweet green peas, steamed tender
  • •1 large Ripe sweet plantain (plátano macho), sliced diagonal and fried golden
  • •1/2 cup Queso sopero or crumbled queso fresco
  • •1 sprig Fresh Mexican epazote or cilantro, for garnish

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Simmer Chiltomate Salsa

Roast tomatoes, onion, garlic, and habanero on a dry comal until blistered. Puree with 1 tsp salt; fry in 1 tbsp lard over medium heat for 10 minutes until concentrated and rich. Keep whole habanero intact to impart perfume without overwhelming heat.

2
Step 2: Crisp Tortillas & Plantains

Flash-fry corn tortillas in shallow hot lard for 30 seconds per side until firm and slightly crisp; drain on paper towels. In the same skillet, fry ripe sweet plantain slices until caramelized and golden brown.

3
Step 3: Fry Sunny-Side Eggs

Gently fry eggs in fresh butter or lard over medium-low heat until whites are fully set with crispy lace borders, keeping the rich yolks gloriously runny and warm.

4
Step 4: Layer & Garnish the Plate

Place two crisped tortillas on each warm plate; slather generously with warm refried black beans. Crown with fried eggs, ladle hot chiltomate salsa around the whites, and scatter diced ham, green peas, crumbled cheese, and sweet fried plantains.

Beverage Pairing

Café de Olla / Chilled Fresh Orange Juice

Traditional Mexican clay pot coffee brewed with piloncillo and cinnamon echoes the sweetness of fried plantains and cuts the earthy richness of black beans.

Culinary Science Insight

Capsaicin Aromatics without Solvent Extraction

Simmering a whole intact charred habanero chile in the salsa extracts volatile fruity floral esters without releasing hydrophobic capsaicin crystals, producing aromatic perfume without searing heat.
