History & Origins
Northern Mexican Cowboy Heritage
Named after the traditional horsemen of northern Mexico (los charros), this rustic stew was created around outdoor campfires by simmering hearty dried pinto beans in clay ollas with whatever cured pork meats and fiery wild chiles were on hand.

Pinto Bean Core & Charro Sofrito

- •6 oz Thick-cut smoked bacon, diced
- •6 oz Fresh Mexican pork chorizo, casings removed
- •1 large White onion, finely diced
- •4 cloves Fresh garlic, minced
- •3 medium Roma tomatoes, seeded and chopped
- •2 fresh Jalapeño or serrano peppers, seeded and sliced
Finishing, Garnishes & Chef’s Additions
- •1/2 cup Fresh cilantro leaves and tender stems, roughly chopped
- •1/2 cup Crumbled queso fresco or cotija cheese
- •1 tsp Dried Mexican oregano, rubbed between palms
- •4 wedges Fresh juicy lime for serving
Step-by-Step Instructions
PREPARATION & METHOD
Place soaked pinto beans in a heavy Dutch oven, cover with 7 cups water and a halved onion, bring to a boil, then reduce to low. Simmer gently for 60 to 75 minutes until beans are tender and creamy to the bite.
In a large skillet, cook diced bacon over medium heat until golden and crispy. Add fresh chorizo, breaking it apart with a spatula until browned. Stir in diced onion, minced garlic, and sliced jalapeños, sautéing for 4 minutes until softened.
Add chopped tomatoes and Mexican oregano to the meat mixture; cook for 3 minutes until tomatoes release their juices. Scrape the entire skillet mixture into the pot of simmering pinto beans. Simmer together for 20 minutes to meld the rich flavors.
Season with salt to taste. Ladle the brothy beans into earthenware bowls, shower with chopped fresh cilantro, crumbled queso fresco, and squeeze fresh lime juice over each serving.
