History & Origins
Puebla Convent Heritage & Mestizo Fusion
Emerging in 16th-century colonial convents of Puebla following the Spanish conquest, Chiles Rellenos represent an iconic synthesis of Mesoamerican charred native poblano peppers with Spanish dairy cheeses and European egg battering methods.

Step-by-Step Instructions
PREPARATION & METHOD
Roast poblanos over gas flame until charred black all over. Steam in a covered bowl for 10 minutes, gently peel charred skin under paper towels, cut a small vertical slit, scrape out seeds, and stuff firmly with Queso Oaxaca. Secure with toothpicks.
Heat 1 tbsp oil in a saucepan. Pour in pureed tomato-onion-garlic sauce and fry for 5 minutes until darkened. Add chicken broth and Mexican oregano; simmer gently for 12 minutes until light and savory.
Beat egg whites with a pinch of salt until stiff glossy peaks form. Gently fold in egg yolks and 1 tbsp flour with a rubber spatula until airy and uniformly pale yellow.
Dust stuffed poblanos in flour, dip into egg batter, and pan-fry in 1/2 inch of 350°F oil for 2-3 minutes per side until puffed and golden. Pool warm caldillo in wide bowls, set chiles on top, and garnish with crema and cotija.
Beverage Pairing
Mexican Vienna Lager (Negra Modelo) or Agua de Jamaica
The toasted malt caramel of Negra Modelo balances the smoky pepper char and cuts the rich fried egg batter and molten Oaxaca cheese.

Capeado Foam Stability & Oil Resistance
Whipping ovalbumin proteins into a mechanical foam encapsulates air bubbles that instantly expand upon contact with hot oil, cooking the outer shell before fat can penetrate into the pepper.
