History & Origins
Ensenada Baja California Coastal Tradition
Born in the bustling Mercado Negro fish market of Ensenada in the 1960s, Baja fish tacos fuse coastal Mexican ingredients with tempura frying techniques brought by Japanese fishermen who fished the Pacific waters of the peninsula earlier in the century.

Step-by-Step Instructions
Preparation & Method
In a mixing bowl, whisk all-purpose flour, cornstarch, baking powder, Mexican oregano, garlic powder, and salt. Pour in ice-cold dark beer, whisking just until combined (small lumps are fine). Keep chilled in the refrigerator until ready to fry.
Heat frying oil to 375°F (190°C) in a Dutch oven. Pat fish fillets dry and dust lightly in plain flour. Dip fish strips into the cold batter, letting excess drip, then carefully lower into the hot oil. Fry in batches for 3-4 minutes until deep golden and shattered-crisp; drain on a wire rack.
Blend Mexican crema, mayonnaise, chipotle in adobo, garlic, lime juice, and salt into a smooth, pastel-orange sauce. Warm corn tortillas on a smoking hot dry skillet until pliable and spotted with brown flecks.
Double up warm corn tortillas. Lay a strip of crispy fried fish in the center, top with a generous handful of shaved cabbage, drizzle with smoky chipotle crema, and finish with crumbled Cotija and a squeeze of fresh lime juice.
