PREPARATION & METHOD
Combine rinsed jasmine rice, coconut milk, water, smashed ginger, bruised lemongrass, salt, and knotted pandan leaves. Cook until tender, then rest 10 minutes before fluffing.
Sauté blended chile and shallot paste in oil over low heat until the oil separates (pecah minyak). Season with tamarind juice, palm sugar, and salt until deeply crimson and glossy.
Mound steaming coconut rice onto a banana leaf. Surround with crispy fried ikan bilis, toasted peanuts, cucumber slices, halved boiled eggs, and a generous ladle of sambal.
Beverage Pairing
Malaysian Teh Tarik (Pulled Milk Tea)
Frothy, sweet, and tannic pulled black tea with condensed milk tempers the fiery capsicum heat of the sambal.
