Authentic Ligurian Trofie al Pesto Genovese (Hand-Rolled Pasta with Fresh Basil Pesto, Potatoes & Green Beans)
Hand-twisted Ligurian trofie pasta boiled together with tender potato slices and crisp green beans, tossed off the heat with raw marble-mortar pounded Genovese basil pesto and aged cheeses.
History & Origins
Ligurian Riviera Emerald Perfection
Originating in the fishing village of Recco in the Gulf of Genoa, trofie pasta features tapered spiral twists specifically shaped to grip mortar-crushed basil sauce. Traditionally cooked alongside potatoes and green beans, the released potato starch creates a glossy, cohesive emulsion.

Step-by-Step Instructions
PREPARATION & METHOD
In a marble mortar with a wooden pestle (or quick pulses in a chilled food processor), crush garlic clove and coarse salt into a cream. Add pine nuts, grinding until pasty. Add basil leaves in circular wrist motions, crushing cell walls gently without heating.
Stir in freshly grated Parmigiano-Reggiano and Pecorino Sardo. Slowly drizzle in Ligurian extra virgin olive oil while gently stirring with a wooden spoon until an unctuous, vivid emerald paste forms. Never cook or heat the pesto.
Bring a large pot of salted water to a rolling boil. Drop in sliced potatoes and green beans. After 4 minutes, add fresh trofie pasta directly into the same pot, boiling together for 4-5 minutes until pasta is perfectly al dente and vegetables are tender.
Scoop 1/3 cup starchy pasta cooking water into a large ceramic serving bowl and stir in the raw pesto. Drain pasta and vegetables, transfer immediately into the bowl, and vigorously toss off the heat until a creamy green emulsion coats every twist.
Beverage Pairing
Ligurian Pigato Riviera Ligure di Ponente / Vermentino
A crisp, saline Ligurian Pigato wine mirrors the coastal terroir of Genovese basil and cuts cleanly through rich sheep pecorino and pine nuts.
Culinary Science Insight
Polyphenol Oxidase Inactivation & Cold Emulsion
Basil leaves contain polyphenol oxidase, an enzyme that turns leaves dull black when bruised or heated past 140°F. Coating leaves in oil during mechanical crushing shields them from oxygen, while combining off-heat with starchy cooking water creates a stable suspension without heat degradation.
