Authentic Korean Gamjatang
A robust, deeply satisfying Korean hot pot featuring slow-simmered pork neck bones that surrender tender meat, whole Yukon gold potatoes, and tender Napa cabbage greens in a fiery fermented soybean and chili broth scented with wild perilla seeds.
History & Origins
Incheon Port’s Legendary Working-Class Feast
Gamjatang originated in 19th-century Incheon among harbor and construction workers needing hearty, low-cost nourishment. While ‘gamja’ today denotes potatoes, etymologists believe it historically referred to the pig spine bones itself, producing an extraordinarily rich marrow broth.
Ingredients
Pork Spine & Rich Broth Base
- •4 lbs Meaty pork neck bones or spine bones, soaked in cold water for 1 hour
- •4 medium Yukon Gold potatoes, peeled and left whole or halved
- •6 leaves Napa cabbage (baechu) or rehydrated dried radish greens (siraegi)
- •3 tbsp Korean soybean paste (Doenjang)
- •2 tbsp Korean red chili paste (Gochujang) & 3 tbsp Gochugaru chili flakes
- •2 tbsp Minced garlic & 1 tbsp grated fresh ginger
Finishing, Garnishes & Chef’s Additions
- •3 tbsp Ground wild perilla seed powder (deulkkae-garu)
- •12 fresh Korean perilla leaves (kkaennip), torn coarsely
- •3 stalks Scallions, cut into 2-inch segments & 1 fresh Korean green chili, sliced
- •2 bowls Steamed white short-grain rice & wasabi soy dipping sauce
Step-by-Step Instructions
Preparation & Method
Place soaked pork bones in a large pot, cover with water, and bring to a rolling boil for 10 minutes to expel residual blood. Drain completely and rinse each bone thoroughly under cold running water.
Return cleaned bones to pot with 12 cups fresh water, onion, garlic, ginger, and doenjang. Simmer covered on medium-low heat for 1 hour until pork is tender and starts releasing bone marrow into the broth.
Whisk gochujang, gochugaru, soup soy sauce, and 1 tbsp fish sauce into the stew. Add peeled potatoes and blanched cabbage leaves. Simmer for 25-30 minutes until potatoes are creamy and tender to the center.
Transfer to a wide hot pot table burner or ceramic dolsot bowl. Mound fresh perilla leaves, scallions, green chilies, and generous tablespoons of perilla seed powder over the top. Simmer table-side and serve with rice.
Beverage Pairing
Chilled Korean Soju / Makgeolli
Clean, ice-cold Korean soju or lightly sparkling unfiltered rice wine (Makgeolli) cuts through spicy pork fat and highlights aromatic perilla seeds.
Culinary Science Insight
Parboiling Hemoglobin Removal & Perilla Emulsification
Initial parboiling expels denatured myoglobin and coagulated blood proteins, guaranteeing a spotless, savory marrow broth. Ground perilla seeds contribute lecithin and omega oils, binding spicy lipids into an unctuous emulsion.
