Authentic Korean Army Base Stew (Budae Jjigae)
A hearty, spicy, and savory Korean fusion hot pot combining cured American pantry proteins with well-fermented kimchi, chewy rice cakes, and instant ramen in a rich anchovy-kelp broth.
History & Origins
Post-War Ingenuity of Uijeongbu
Emerging after the Korean War near U.S. military bases in Uijeongbu, Budae Jjigae was born when resourceful local cooks combined surplus canned meats like Spam and frankfurters with traditional gochujang chili paste and aged kimchi into a celebrated culinary classic.

Step-by-Step Instructions
PREPARATION & METHOD
In a wide, shallow hot pot or large cast-iron pan, arrange Spam, sliced sausages, aged kimchi, tofu slabs, rice cakes, enoki mushrooms, and baked beans neatly in radiating sections, leaving the center open.
Place the blended gochujang chili seasoning paste into the center. Pour the warm kelp-anchovy broth gently around the edges so the arranged ingredients remain in place. Bring to a rapid rolling boil over medium-high heat.
Once boiling, spoon the hot broth over the seasoning paste to dissolve it completely. Cook for 6 to 8 minutes until the cured meats render their savory saltiness into the rich bubbling soup.
Nestle the instant ramen noodles into the center of the pot. Drape the American cheese slices on top of the noodles and scatter scallions. Boil for 3 minutes until noodles are springy and al dente. Serve immediately at the table.
Beverage Pairing
Chilled Korean Soju or Crisp Pale Lager
A frosty glass of classic Korean lager or ice-cold soju cuts straight through the stew’s savory richness and spicy kimchi heat, refreshing the palate between bites.
Culinary Science Insight
Glutamate Synergy & Emulsified Sodium Citrate
The sodium citrate in American cheese acts as an emulsifier, binding pork fats with the chili broth into a silky stew, while fermented kimchi acid balances high sodium levels.
