Authentic Japanese Nasu Dengaku (Sweet Miso-Glazed Broiled Eggplant)
Succulent halves of Japanese eggplant scored and pan-seared until meltingly creamy, slathered in a glossy sweet-savory red miso glaze and broiled until bubbling and caramelized.
History & Origins
Zen Buddhist Temple Cuisine (Shojin Ryori)
Named after ancient agricultural ritual dances (dengaku-hoshi), this preparation originated in Zen monasteries across Kyoto. Celebrated throughout Japan’s izakayas and traditional ryokan inns, Dengaku transforms humble seasonal eggplant into a rich, umami-dense culinary triumph.
Ingredients
Eggplant & Caramelized Miso Glaze (Nerimiso)
- •4 medium Japanese or globe eggplants, halved lengthwise and scored in diamonds
- •4 tbsp Red or awase (mixed) miso paste
- •3 tbsp Hon-mirin (sweet Japanese rice cooking wine)
- •2 tbsp Japanese cooking sake and 2 tbsp sugar
- •3 tbsp Toasted sesame oil mixed with neutral oil for pan-searing
Finishing, Garnishes & Chef’s Additions
- •1 tbsp Toasted white and black sesame seeds
- •2 tbsp Scallions or fresh micro shiso finely snipped
Step-by-Step Instructions
PREPARATION & METHOD
Whisk miso, mirin, sake, and sugar in a small saucepan over low heat for 3-4 minutes until sugar dissolves and sauce becomes thick, dark, and glossy.
Score cut faces in a 1/2-inch deep crosshatch pattern. Sear cut-side down in hot sesame oil for 5 minutes until browned. Flip, add 2 tbsp water, cover, and steam 5 minutes until custard-tender.
Transfer eggplants cut-side up to a baking sheet. Generously brush each with sweet nerimiso glaze. Broil on high for 3-4 minutes until bubbling with charred blisters. Garnish with sesame seeds.
Beverage Pairing
Crisp Japanese Dry Lager (Asahi Super Dry)
Crisp, dry, and super-clean effervescence balances the rich caramelization and intense fermented savory sweetness of the red miso glaze.
Culinary Science Insight
Porous Parenchyma Sponge Collapse & Sugar Caramelization
Eggplant flesh consists of air-filled parenchyma cells. Initial oil searing collapses the cellular air chambers, allowing the melting eggplant tissue to absorb seasoned steam before the high-sugar miso glaze caramelizes under direct broiler heat.
