Authentic Japanese Chicken Nanban (Crispy Fried Chicken with Sweet Tartar Sauce)
Miyazaki prefecture’s beloved Yoshoku innovation: juicy egg-battered fried chicken thighs dipped straight from the oil into a sweet, tangy nanban vinegar glaze, generously smothered in rich Japanese egg tartar sauce with shredded cabbage.
History & Origins
Miyazaki’s Western-Infused Soul Food
Developed in the 1960s at restaurant London in Nobeoka, Miyazaki, Chicken Nanban took inspiration from historical Portuguese ‘Nanban’ vinegar escabeche techniques, pairing sweet-sour marinaded fried chicken with a decadent hard-boiled egg tartar sauce that became an instant national obsession.
Ingredients
Crisp Chicken & Nanban Vinegar Glaze
- •1.8 lbs Boneless skinless chicken thighs, cut into bite-sized cutlets
- •1/2 cup All-purpose flour and 2 large eggs, lightly beaten (egg dredge)
- •Nanban Glaze 1/3 cup Japanese rice vinegar, 1/3 cup soy sauce, 1/4 cup sugar, 1 tbsp mirin, 1 dried red chili
Finishing, Garnishes & Chef’s Additions
- •Egg Tartar Sauce 3 hard-boiled eggs mashed, 1/2 cup Kewpie mayonnaise, 2 tbsp minced onion, 1 tsp lemon juice, salt & pepper
- •Accompaniments Chilled finely shredded green cabbage, fresh lemon wedges, and chopped parsley
- •Warm Steamed Japanese short-grain rice (Koshihikari)
Step-by-Step Instructions
PREPARATION & METHOD
Combine rice vinegar, soy sauce, sugar, mirin, and sliced chili in a saucepan. Bring to a gentle boil for 2 minutes until sugar dissolves completely. Pour into a shallow wide dish and keep warm.
Finely mash hard-boiled eggs in a bowl. Fold in Kewpie mayonnaise, finely minced onion (rinsed and squeezed dry), lemon juice, salt, and freshly ground black pepper until creamy with visible egg morsels.
Season chicken pieces with salt and pepper. Dredge thoroughly in flour, then dip into beaten egg. Drop directly into 350°F (175°C) oil and fry for 5-6 minutes until puffed, golden, and cooked through.
Transfer hot fried chicken straight from the oil into the warm sweet nanban vinegar, soaking for 45-60 seconds to absorb the glaze. Transfer to plates beside shredded cabbage and crown generously with egg tartar sauce.
Beverage Pairing
Japanese Highball (Suntory Whisky & Soda) / Kirin Ichiban
A sparkling, chilled whisky highball with a fresh lemon twist cleanses the richness of Kewpie egg tartar, while crisp Kirin lager matches sweet vinegar notes.
Culinary Science Insight
Osmotic Vapor Exchange in Hot Vinegar Glaze
Dipping piping-hot fried chicken directly into vinegar creates rapid steam condensation within the outer flour-egg crust. As cooling occurs, capillary suction draws the sweet-sour soy vinegar deep into the batter layer without making it unpleasantly greasy.
