Authentic Italian Risotto ai Frutti di Mare
Luxurious Venetian Carnaroli rice slowly coaxed into an all’onda wave with concentrated seafood fumet, tender calamari, sweet Manila clams, and succulent wild prawns.
History & Origins
Venice’s Laguna Seafood Rice Tradition
In the Venetian lagoon, risotto is an art form perfected over centuries. Unlike terrestrial risottos that lean heavily on dairy mantecatura, authentic Risotto ai Frutti di Mare relies on emulsifying starch with fragrant olive oil and concentrated seafood liquor.
Ingredients
Carnaroli Rice, Adriatic Shellfish & Seafood Fumet
- •1.5 cups Premium Italian Carnaroli or Superfino Vialone Nano rice
- •1 lb Manila clams or cockles, scrubbed
- •1/2 lb Wild medium prawns, shelled (shells reserved for broth)
- •1/2 lb Cleaned calamari tubes and tentacles, cut into rings
- •5 cups Hot seafood fumet (simmered with prawn shells, onion, parsley)
- •1/2 cup Dry Italian white wine (Soave or Pinot Grigio)
Finishing, Garnishes & Chef’s Additions
- •3 tbsp High-grade Ligurian extra virgin olive oil (for mantecatura)
- •1/3 cup Fresh Italian flat-leaf parsley, finely chopped
- •1 clove Garlic, finely grated and 1 pinch red pepper flakes
- •1/2 tsp Fresh lemon zest, finely grated
Step-by-Step Instructions
Preparation & Method
Heat 1 tbsp olive oil with garlic clove in a wide pan. Add clams and 1/4 cup white wine. Cover with tight lid for 3 minutes until clams open. Strain clam liquor through cheesecloth into simmering seafood broth.
Toast dry Carnaroli rice in 1 tbsp olive oil in a wide heavy rondeau over medium heat for 2 minutes until hot and pearlescent. Deglaze with remaining white wine, stirring vigorously until completely absorbed.
Ladle hot seafood stock over rice, stirring constantly. At minute 8, stir in calamari rings. Continue adding stock ladle by ladle for 14-16 minutes until rice is al dente with creamy starch suspension.
Fold in peeled prawns and steamed clams for the last 2 minutes. Remove pan from heat. Vigorously beat in extra virgin olive oil, chopped parsley, and lemon zest to create the creamy all’onda wave without cheese.
Beverage Pairing

Culinary Science Insight
Carnaroli Amylose Emulsification
High-amylose Carnaroli maintains a firm crystalline core while shedding outer amylopectin granules during mechanical agitation, forming a rich natural emulsion with hot oil.
