History & Origins
Chettinad Merchant Spice Mastery
The Chettiars of Tamil Nadu were maritime spice traders who traversed Southeast Asia, Ceylon, and Burma. Their cuisine is celebrated for uncompromising complexity, dry-roasting whole tellicherry black peppercorns, kalpasi (black stone flower), and marathi mokku into an unmatched dark masala paste.

Step-by-Step Instructions
PREPARATION & METHOD
Dry roast red chilies, black peppercorns, coriander seeds, cumin, fennel, and whole spices in a heavy pan until deeply fragrant. Add grated coconut and roast until toasted golden brown. Grind with water into a thick, smooth masala paste.
Heat gingelly oil in a heavy uruli or Dutch oven. Add mustard seeds, fennel seeds, and fresh curry leaves until crackling. Add sliced shallots and sauté until browned. Stir in ginger-garlic paste and chopped tomatoes until tomatoes cook down to oil separation.
Add bone-in chicken pieces, turmeric, and salt. Sauté over medium-high heat for 5 minutes until chicken is sealed. Pour in the freshly ground roasted Chettinad masala paste and 1 cup of water, bringing to a rolling boil.
Cover and simmer gently for 25 minutes until chicken is tender and dark reddish-brown oil pools at the surface (rogun). Uncover, reduce for 5 minutes, and garnish with fresh coriander and crackling fried curry leaves.
Beverage Pairing
South Indian Neer Mor (Spiced Buttermilk) / Syrah
Chilled churned yogurt tempered with ginger, green chilies, and asafoetida (Neer Mor) instantly tames the intense heat of tellicherry black pepper.
Culinary Science Insight
Piperine Thermal Extraction & Medium-Chain Triglycerides
Piperine in black pepper provides a sharper, dry heat compared to the water-soluble capsaicin of red chilies. Roasting whole peppercorns alongside fresh coconut releases coconut’s lauric triglycerides, which dissolve piperine and bind it evenly to meat collagen.
