History & Origins

North Indian Homestyle Dhaba Classic

Bhindi Masala (also known as Bhindi Do Pyaza) is the undisputed darling of North Indian and Punjabi everyday home cooking and highway dhabas. Mastering this dish requires the revered technique of completely drying okra before cutting to prevent mucilage release.

Ingredients

Crisp Okra & Sautéed Onion Base

  • •1 lb (450g) Tender fresh green okra (bhindi), wiped 100% dry and sliced into 1-inch pieces
  • •3 tbsp Mustard oil or neutral cooking oil
  • •2 large Red onions, one finely chopped and one cut into chunky petals
  • •2 medium Ripe red tomatoes, finely chopped
  • •1 tbsp Ginger-garlic paste
  • •1 tsp Cumin seeds & 1/2 tsp carom seeds (ajwain)

Finishing, Garnishes & Chef’s Additions

  • •1 tsp Dry green mango powder (Amchur) or fresh lemon juice
  • •1 tsp Kashmiri red chili powder & 1/2 tsp turmeric powder
  • •1/2 tsp Punjabi garam masala
  • •2 Fresh green chilies, slit lengthwise
  • •Accompaniment Hot puffed phulka rotis or flaky parathas with cool boondi raita

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Pan-Sear Okra Dry & Uncovered

Heat 1.5 tbsp oil in a wide kadai over medium-high heat. Add sliced dry okra. Sauté uncovered for 8-10 minutes, tossing occasionally, until tender, lightly blistered, and any slime evaporates completely. Transfer okra to a plate.

2
Step 2: Bloom Whole Spices & Sauté Onions

Add remaining oil to kadai. Add cumin and ajwain seeds until sputtering. Add finely chopped onions and sauté until translucent. Add ginger-garlic paste and slit green chilies, stirring for 60 seconds until aromatic.

3
Step 3: Build Tomato Masala Base

Add chopped tomatoes, turmeric, Kashmiri chili powder, coriander powder, and salt. Cook on medium heat for 4-5 minutes until tomatoes break down into a thick masala and oil separates from the edges. Add onion petals.

4
Step 4: Combine, Amchur Tang & Final Toss

Fold roasted okra into the masala. Sprinkle amchur (dry mango powder) and garam masala. Toss gently over low heat for 3 minutes without crushing okra pods. Garnish with fresh cilantro leaves and serve immediately with hot rotis.

Beverage Pairing

Fresh Sweet Lassi / Dry Indian Lager

A frothy, sweet cardamom lassi balances the sharp acidity of amchur and green chilies, while an ice-cold Indian lager provides refreshing effervescence.

Culinary Science Insight

Exopolysaccharide Denaturation & Acid Coagulation

Okra slime is composed of water-soluble glycoproteins (mucilage). Sautéing in dry hot fat without steam prevents viscosity buildup, while the citric and tartaric acids in amchur powder disrupt hydrogen bonds within the exopolysaccharide chains, eliminating sliminess.
