Authentic German Black Forest Cake (Schwarzwälder Kirschtorte with Morello Cherries and Kirschwasser)
Germany’s world-renowned layered torte of airy chocolate genoise soaked in Kirschwasser cherry eau-de-vie, tart Morello cherries, cloud-like Chantilly cream, and dark chocolate shavings.
History & Origins
Baden-Württemberg’s Cherry Schnapps Legacy
Codified in 1930s southwestern Germany, German law stipulates that any authentic Schwarzwälder Kirschtorte must feature genuine Black Forest Kirschwasser (cherry brandy) to balance its rich cream and dark cocoa layers.
Ingredients
Cocoa Genoise Sponge & Morello Cherry Compote
- •6 large Room-temperature eggs, separated
- •3/4 cup (150g) Granulated sugar and 1 tsp pure vanilla bean extract
- •1/2 cup (50g) Dutch-processed unsweetened dark cocoa powder
- •3/4 cup (100g) Cake flour, sifted with 1 pinch fine sea salt
- •1 jar (24 oz) Pitted sour Morello cherries, drained with juice reserved
Finishing, Garnishes & Chef’s Additions
- •1/3 cup Authentic Schwarzwälder Kirschwasser (cherry eau-de-vie)
- •3 cups (720ml) Heavy whipping cream, whipped with 1/3 cup powdered sugar to stiff peaks
- •4 oz (115g) Bittersweet dark chocolate block, shaved into curls
Step-by-Step Instructions
PREPARATION & METHOD
Whip egg whites and sugar to stiff glossy peaks. Gently fold in beaten yolks, followed by sifted cocoa and flour. Bake in a 9-inch pan at 350°F (175°C) for 30 minutes, then cool and slice into 3 layers.
Simmer reserved cherry juice with 2 tbsp sugar and 1.5 tbsp cornstarch until thickened and glossy. Stir in sour Morello cherries and 1 tbsp Kirschwasser, then cool completely.
Generously brush each chocolate sponge round with remaining Kirschwasser. Pipe rings of stiff whipped cream on the bottom sponge, filling inner ring with cherry compote.
Stack remaining soaked sponge layers with whipped cream. Coat sides and top in whipped cream, press dark chocolate curls into the sides, and crown with whole cherries.
Beverage Pairing
Kirschwasser Digestif / Viennese Melange Coffee
A chilled neat glass of clear Kirsch cherry eau-de-vie or dark roast Viennese coffee with foamed milk balances dark cocoa bitterness.
Culinary Science Insight
Alcohol Miscibility & Foam Structure Stabilization
High-proof Kirschwasser penetrates cocoa starch networks without collapsing air cells, while chilling the assembled torte sets dairy fat globules for clean slicing.
