History & Origins

Occitan Medieval Siege Heritage

Legend attributes Cassoulet to the 14th-century Hundred Years’ War siege of Castelnaudary, where townspeople combined preserved meats and beans in an earthenware ‘cassole’. Toulouse enriched the dish with celebrated local garlic sausages and duck confit.

Ingredients

Tarbais White Beans, Duck Confit & Pork

  • •1 lb (450g) Dried French Tarbais white beans (or Great Northern), soaked overnight
  • •4 legs Authentic French duck leg confit, rendered fat reserved
  • •1 lb Fresh Toulouse sausages (coarse pork and wine sausages), browned
  • •1/2 lb Salt pork or fresh pork belly, diced and blanched
  • •1 large Pork rind (couenne), rolled and tied (for deep gelatin extraction)
  • •6 cups Gelatin-rich chicken or duck bone broth with 1 head garlic and bouquet garni

Finishing, Garnishes & Chef’s Additions

  • •1 cup Stale artisanal sourdough breadcrumbs tossed in melted duck fat
  • •2 tbsp Fresh flat-leaf parsley, finely chopped
  • •1 crisp Green frisée salad dressed in walnut oil and sherry vinegar

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Parboil Tarbais Beans with Aromatics

Soak dried Tarbais beans overnight. Simmer beans in rich stock with the rolled pork rind, whole garlic head, carrots, and bouquet garni for 45 minutes until tender yet fully intact. Drain, reserving cooking broth.

2
Step 2: Brown Meats in Duck Fat

In a skillet with 2 tbsp duck fat, sear Toulouse sausages and pork belly until deeply browned. Lightly crisp duck confit legs on their skin side for 3 minutes. Slice sausages into thick chunks.

3
Step 3: Assemble Earthenware Cassole Layers

Rub an earthenware cassole with raw garlic. Line the base with pork rind pieces. Layer half the beans, tuck in sausages, pork belly, and duck legs, then cover with remaining beans. Pour warm bean stock just to cover the top.

4
Step 4: Slow Bake & Break Crust 7 Times

Bake uncovered at 300°F (150°C) for 3 hours. As a golden-brown crust forms on top, gently pierce and submerge it with the back of a spoon 5 to 7 times according to Gascon lore. Top with duck-fat breadcrumbs for final 20 minutes.

Beverage Pairing

Madiran (Tannat) or Cahors (Malbec)

The aggressive, grippy tannins of a dark Southwestern French Madiran dissolve against the unctuous gelatin and rich duck fat of the cassoulet.

Culinary Science Insight

Gelatin Skin Formation & Maillard Repetitive Folding

Slow oven evaporation forms a surface pellicle of denatured collagen and duck lipids. Repeatedly submerging this skin disperses Maillard reaction compounds throughout the bean cooking liquid.
