Step-by-Step Instructions
PREPARATION & METHOD
Gently lower eggs into boiling water and cook for exactly 6 minutes and 30 seconds. Transfer immediately to an ice bath for 5 minutes, then peel carefully to yield jammy, creamy centers. In salted boiling water, blanch haricots verts for 3 minutes and shock in ice water.
In a small bowl, whisk 1 tablespoon Dijon mustard, 2 tablespoons red wine vinegar, 1 minced shallot, 1 grated garlic clove, 1/2 teaspoon kosher salt, and black pepper. Slowly stream in 1/3 cup extra virgin olive oil while whisking vigorously until thick and glossy.
Submerge seasoned fresh tuna steak in gentle 160°F (70°C) olive oil infused with thyme and lemon peel for 8-10 minutes until barely cooked through and tender. Alternatively, drain luxury jarred bonito del norte into generous flaky chunks.
Toss warm potatoes and green beans lightly with 2 tablespoons vinaigrette. On a large shallow platter, artfully compose clusters of dressed potatoes, crisp haricots verts, sliced tomatoes, cucumbers, flaked tuna chunks, halved jammy eggs, and briny Niçoise olives. Drizzle with remaining vinaigrette and fresh basil.

Culinary Science Insight
Gentle Poaching Confit & Starch Absorption
Poaching tuna gently at 160°F prevents albumin from weeping and keeps dense muscle fibers tender and moist. Dressing warm freshly-steamed potatoes allows their gelatinized cell walls to drink in vinegar and aromatics via capillary action before cooling.
