History & Origins

Classic French Escoffier Bistro Fare

Known in France as ‘Poulet Sauté Chasseur’, this celebrated classic was historically created by hunters returning from the autumn woods with wild game birds and freshly foraged chanterelles or cèpes. Modern French bistros braise succulent chicken in the pan sauce, infusing the fond with tarragon and wine.

Ingredients

Poultry & Sauté Base

  • •2 1/2 lbs Bone-in, skin-on chicken thighs and drumsticks
  • •10 oz Fresh cremini and chanterelle mushrooms, sliced thick
  • •2 large French shallots, finely diced
  • •3 cloves Garlic, smashed and minced
  • •2 tbsp French unsalted butter and 1 tbsp olive oil

Finishing, Garnishes & Chef’s Additions

  • •1/4 cup French Cognac or brandy, for flambéing
  • •3/4 cup Dry French white wine (Bordeaux Blanc or Sauvignon Blanc)
  • •1 cup Rich homemade chicken stock simmered with 1 tbsp tomato paste
  • •2 tbsp Cold unsalted butter, cubed
  • •2 tbsp Fresh French tarragon and flat-leaf parsley, chopped

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Deep Crisp Chicken Skin

Season chicken generously with sea salt and black pepper. In a large enameled Dutch oven, melt 1 tbsp butter and olive oil over medium-high heat. Sear chicken skin-side down for 8-10 minutes until deeply golden and crispy; flip for 3 minutes, then set aside.

2
Step 2: Caramelize Mushrooms & Flambé Cognac

Pour off excess fat leaving 2 tbsp. Sauté sliced mushrooms for 6 minutes until browned and nutty. Add shallots and garlic for 2 minutes. Pour in Cognac, carefully ignite with a flame (or boil vigorously) until alcohol burns off.

3
Step 3: Deglaze & Gentle Braise

Pour in dry white wine, scraping up caramelized chicken fond. Stir in chicken stock, tomato paste, and half the tarragon. Return chicken pieces skin-side up (keeping the skin exposed above liquid). Simmer uncovered at 350°F (175°C) in the oven for 25 minutes.

4
Step 4: Swirl Butter & Fresh Herb Finish

Remove chicken to a warm serving platter. Place Dutch oven on the stove over low heat and swirl in cold butter until the hunter sauce turns glossy and velvety. Spoon mushroom sauce around chicken and shower with remaining fresh tarragon.

Beverage Pairing

Burgundy Pinot Noir / Côtes du Rhône Blanc

A light, earthy Bourgogne Pinot Noir enhances the forest-floor notes of the sautéed mushrooms while harmonizing with anise-scented tarragon.

Culinary Science Insight

Estragole Anise Pairing Chemistry

French tarragon contains volatile estragole compounds whose licorice-anise notes bond with mushroom octen-3-ol molecules, creating an intense savory depth characteristic of classic game cookery.
