Authentic Filipino Crispy Pata (Deep-Fried Pork Knuckle with Spiced Garlic-Vinegar Dip)
A legendary celebratory Filipino centerpiece—whole pork shank simmered in lemongrass, garlic, and bay leaves until fork-tender, frozen to dry the skin, and deep-fried to create an ear-shattering blistered crackling skin encasing gelatinous, tender meat.
History & Origins
1950s Caloocan Innovation & Pulutan Feast Culture
Created in the late 1950s by Rodolfo Ongpauco at his family’s restaurant Barrio Fiesta in Caloocan City, Crispy Pata turned discarded pork trotters into the ultimate Filipino drinking food (‘pulutan’) and centerpiece banquet trophy.
Ingredients
Pork Shank & Aromatic Simmering Broth

Finishing, Garnishes & Chef’s Additions
- •1 cup Toyomansi dipping sauce (cane vinegar, soy sauce, calamansi juice, minced red onion, Thai bird’s eye chilies)

- •1 bowl Hot steamed garlic sinangag fried rice
Step-by-Step Instructions
PREPARATION & METHOD
Place pork shank in a large pot, submerge with cold water, and bring to a boil. Skim impurities. Add garlic, lemongrass, bay leaves, peppercorns, salt, and vinegar. Cover and simmer gently for 2 hours until the meat is fork-tender but not falling off the bone.
Carefully remove shank and pat completely dry with paper towels. Prick skin hundreds of times with a meat skewer or cake tester. Place uncovered on a wire rack in the freezer for 4-6 hours (or overnight in the fridge) to thoroughly dehydrate the skin.
Heat frying oil in a deep heavy pot to 375°F (190°C). Gently lower chilled pork shank into hot oil and immediately cover partially with a splatter guard. Fry for 10-12 minutes per side, ladling boiling oil over the exposed knuckle until deep golden brown.
For ultimate puffing, flick small drops of ice water onto the hot bubbling skin right before removing (covered with lid). Transfer to a cooling rack to drain for 10 minutes. Carve with a cleaver and serve with toyomansi dipping sauce.
Beverage Pairing
San Miguel Pale Pilsen or Calamansi Soda
A frosty bottle of San Miguel Pale Pilsen or Red Horse Beer is the quintessential Filipino pairing, cutting through rich roasted pork crackling and resetting tastebuds.
Culinary Science Insight
Sublimation Dehydration & Flash Vaporization
Freezing the boiled shank evaporates surface water while solidifying subcutaneous fats; when plunged into 375°F oil, moisture trapped in collagen blisters rapidly flashes to steam, creating thousands of microscopic airy bubbles that yield glass-like shatter.
