Authentic Filipino Chicken Tinola (Gingered Chicken Soup with Green Papaya and Chili Leaves)
A comforting Filipino chicken soup steeped with aromatic crushed ginger, tender bone-in chicken thighs, green papaya wedges, and siling labuyo pepper leaves in a soothing savory broth.
History & Origins
Ancestral Healing Soup of the Philippines
Historically served as a nourishing restorative dish across Luzon and the Visayas, Tinola highlights ginger’s medicinal warmth combined with traditional rice washing water to yield a subtly starchy, savory broth.
Ingredients
Gingered Broth & Simmered Chicken Core
- •2 lbs Bone-in, skin-on chicken thighs, cut into bite-sized pieces
- •2.5 inches Fresh ginger root, peeled and cut into thin matchsticks
- •5 cloves Fresh garlic, crushed and coarsely minced
- •1 medium Yellow onion, sliced
- •2 tbsp Artisanal fish sauce (patis)
- •5 cups Rice wash water (second rinse of jasmine rice) or light chicken broth
- •1 small Green unripe papaya or sayote (chayote), peeled and wedged
Finishing, Garnishes & Chef’s Additions
- •2 cups Fresh chili pepper leaves (dahon ng sili) or baby spinach
- •1 fresh Siling haba (long green chili finger), left whole
- •1 tsp Whole black peppercorns, lightly crushed
- •4 bowls Steamed white jasmine rice for serving
Step-by-Step Instructions
PREPARATION & METHOD
Heat oil in a heavy soup pot over medium heat. Sauté ginger matchsticks for 2 minutes until intensely fragrant, then add garlic and sliced onions until translucent. Add chicken pieces and sear until surfaces turn opaque.
Drizzle fish sauce directly over the sizzling chicken. Stir continuously for 2 minutes allowing chicken juices and umami fish sauce to coat every piece and lightly glaze the pot base.
Pour in rice wash water and black peppercorns. Bring to a rapid rolling boil, skim any surface froth, then reduce heat to low, cover, and gently simmer for 25 minutes. Drop in green papaya wedges and cook for 8 minutes until fork-tender.
Toss in whole long chili and fresh chili leaves. Turn off heat immediately and replace lid, letting residual steam gently wilt leaves for 2 minutes to preserve vibrant green color. Ladle hot over bowls of steamed jasmine rice.
Beverage Pairing
Chilled Calamansi Juice / Crisp Filipino San Miguel Pale Pilsen
A glass of fresh calamansi citrus cooler or a dry ice-cold lager cuts through ginger heat and enhances savory poultry broth.
Culinary Science Insight
Papain Proteolytic Tenderization & Gingerol Infusion
Green papaya contains natural papain enzyme which gently softens meat fibers while simmering, while gingerol extractives create thermal warmth without scorching pungency.
