History & Origins

Fiery Coconut Comfort of the Bicol Peninsula

Inspired by traditional Bicolano Gulay na may Lada and popularized in Manila by Cely Kalaw, Bicol Express is named after the passenger train running between Manila and the chili-and-coconut haven of the Bicol region.

Ingredients

Crisp Pork Belly & Coconut Milk Braise

  • •2.5 lbs Pork belly (liempo), cut into 1-inch cubes
  • •2 cups Pure coconut milk (gata) and 1.5 cups thick coconut cream (kakang gata)
  • •3 tbsp Sautéed shrimp paste (bagoong alamang)
  • •1 medium Red onion, chopped, and 6 cloves garlic, minced
  • •2 tbsp Minced fresh ginger and 1/2 tsp freshly cracked black pepper

Finishing, Garnishes & Chef’s Additions

  • •8 Finger chilies (siling haba), sliced diagonally
  • •10 Red bird’s eye chilies (siling labuyo), finely sliced
  • •2 tbsp Coconut oil rendered from kakang gata for final glistening sheen
  • •6 cups Piping hot steamed white jasmine rice (kanin)

Step-by-Step Instructions

Preparation & Method

1
Step 1: Render & Sear Pork Belly Cubes

Place pork belly cubes into a wide heavy pot with 1/2 cup water. Cook over medium heat until the water evaporates and the pork fries in its own rendered fat, turning lightly golden and crisp on all sides (8-10 minutes).

2
Step 2: Sauté Aromatics & Bagoong

Push pork to one side. Sauté garlic, ginger, and onion in the hot pork drippings until softened. Stir in the bagoong alamang (shrimp paste), cooking for 2 minutes to caramelize the umami paste into the aromatics.

3
Step 3: Simmer in Coconut Milk

Pour in 2 cups of coconut milk (gata) and half of the sliced chilies. Bring to a gentle boil, reduce heat to low, and simmer uncovered for 25-30 minutes until the pork belly is melt-in-your-mouth tender and the sauce reduces by half.

4
Step 4: Reduce Kakang Gata & Glaze with Chilies

Pour in the thick coconut cream (kakang gata) and remaining fresh finger chilies and bird’s eye chilies. Simmer for 8-10 minutes until the cream thickens into a glossy, velvety glaze that clings to the pork. Serve hot over copious steamed rice.

Beverage Pairing

San Miguel Pale Pilsen or Chilled Calamansi Juice

An ice-cold San Miguel Pale Pilsen or fresh citrusy calamansi cooler cuts through the rich coconut fat and tempers the fiery heat of the siling labuyo.

Culinary Science Insight

Capsaicin Solubility in Medium-Chain Triglycerides

Capsaicin is highly hydrophobic; the abundant medium-chain triglycerides in coconut cream dissolve chili alkaloids, diffusing intense heat smoothly across the palate rather than delivering sharp burn spikes.
