Step-by-Step Instructions
PREPARATION & METHOD
Heat 2 tablespoons oil in a Dutch oven over high heat. Season beef chuck cubes with salt and black pepper. Sear in uncrowded batches for 4 minutes per side until crusted and caramelized. Remove and set aside.
In remaining oil, sauté chopped onion, garlic, and minced bird’s eye chilies for 3 minutes until soft. Stir in tomato sauce, tomato paste, bay leaves, and beef broth, scraping all caramelized beef fond from the pot bottom.
Return seared beef chunks to pot. Cover with a tight-fitting lid and simmer over low heat for 1.5 hours (or bake at 325°F) until the beef yields effortlessly to a fork.
Stir in liver spread, grated cheddar cheese, pan-fried potatoes, carrots, bell peppers, and green olives. Simmer uncovered for 15 minutes until vegetables are tender, cheese melts, and the gravy turns remarkably thick and velvety.
Beverage Pairing
San Miguel Pale Pilsen or Calamansi Cooler
An ice-cold San Miguel lager or tart calamansi citrus juice cuts through rich liver paste gravy and complements spicy bird’s eye chilies.
Culinary Science Insight
Liver Phospholipids & Emulsified Gravy Viscosity
Liver spread contains dense concentrations of natural emulsifying phospholipids and iron-rich proteins that stabilize beef fat droplets inside acidic tomato sauce, producing a luxurious mouthfeel unobtainable with flour alone.
