History & Origins

Guangzhou Dim Sum Crown Jewel

Originating in a riverside teahouse in suburban Guangzhou, Har Gow is celebrated as the pinnacle test of a dim sum chef’s skill. Master chefs are judged on producing translucent skins with at least seven delicate pleats that never tear when lifted.

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Whip Shrimp Filling for Snap

Roughly chop half the shrimp and mince the remainder into a paste. Stir vigorously in one direction with sesame oil, Shaoxing wine, white pepper, salt, minced bamboo shoots, and pork fat until bouncy and sticky. Chill for 30 minutes.

2
Step 2: Scald & Knead Crystal Dough

Pour rolling-boiling water over wheat and tapioca starches, stirring rapidly with chopsticks. Cover for 5 minutes to steam. Knead in lard until smooth, pliable, and snowy white. Cover with a damp towel to prevent drying.

3
Step 3: Flatten with Cleaver & Pleat

Divide dough into 12g balls. Using the oiled flat side of a Chinese chef’s cleaver, press and drag each ball into a paper-thin circular wrapper. Place 1 tbsp filling in the center and fold with 7-9 tiny pleats into a bonnet crescent.

4
Step 4: Steam in Bamboo Basket

Arrange dumplings in a parchment-lined bamboo steamer basket, spacing 1 inch apart. Steam over high boiling water for exactly 6 to 7 minutes until the skin turns completely transparent and crystal clear. Serve hot.

Beverage Pairing

Hot Tie Guan Yin Oolong / Pu-erh Tea

A hot pot of floral Tie Guan Yin oolong tea cleanses delicate shrimp juices and enhances the subtle sweet aroma of bamboo shoots.

Culinary Science Insight

Wheat Starch Retrogradation & Myosin Protein Cross-Linking

Gluten-free wheat starch gelatinizes upon scalding into a pliable paste that crystallizes into optical translucence upon steaming, while vigorous directional stirring aligns prawn myosin filaments for that signature snappy bite.
