Authentic Brazilian Pão de Queijo (Golden Chewy Tapioca Cheese Bread Rolls)
Naturally gluten-free golden puffs from Minas Gerais with an ultra-crispy outer shell and a decadently chewy, stretchy molten interior scented with cured artisan cheese.
History & Origins
Minas Gerais Farmstead Staple
Originating in the 18th century across dairy ranches in Minas Gerais, Brazil, farm cooks developed cheese bread when wheat was scarce. Utilizing fermented indigenous cassava root starch (polvilho azedo) paired with cured farm cheese yielded this Brazilian icon.
Ingredients
Cassava Tapioca Dough & Cheese Core
- •2 cups Sour tapioca starch (Polvilho Azedo) for expansion and chew
- •1 cup Sweet tapioca starch (Polvilho Doce) for density and structure
- •1 cup Whole milk and 1/2 cup neutral vegetable oil or unsalted butter
- •1.5 tsp Fine sea salt
- •2 large Farm eggs, lightly beaten at room temperature
- •2 cups Freshly grated Queijo Meia Cura (or blend of sharp white cheddar and parmesan)
Finishing, Garnishes & Chef’s Additions

Step-by-Step Instructions
PREPARATION & METHOD
Combine milk, oil, and salt in a small saucepan over medium heat. Bring just to a rolling boil. In a large heatproof bowl, combine both tapioca starches. Pour the boiling liquid over the starch immediately to gelatinize.
Stir with a wooden spoon until a shaggy white dough forms. Allow the mixture to cool for 10-15 minutes until barely warm to the touch so it will not cook the eggs upon contact.
Crack in eggs one at a time, mixing by hand or stand mixer until fully integrated and glossy. Fold in the grated cheese until evenly distributed into a soft, slightly tacky dough.
Oil hands lightly and roll dough into golf-ball-sized spheres (approx 35g each). Space 2 inches apart on parchment-lined baking sheets. Bake at 400°F (200°C) for 20-25 minutes until puffed and delicately golden.
Beverage Pairing
Fresh Brazilian Cafezinho / Fresh Orange Juice
A strong, hot shot of filtered Brazilian coffee (cafezinho) with brown sugar provides the iconic morning contrast to warm, savory cheese bread.
Culinary Science Insight
Pre-Gelatinization & Amylopectin Air Pocket Expansion
Pouring boiling liquid directly over pure tapioca starch instantly swells starch granules (scalding), capturing steam during oven bake to expand dough balls by 200% without chemical leaveners.
