Authentic Filipino Tokwa’t Baboy (Crispy Pork Belly and Tofu in Tangy Garlic Calamansi Soy Vinegar)
The quintessential Filipino pulutan (drinking food) and congee companion: golden crisp-fried cubes of firm tofu and blistered pork belly tossed in a zesty dipping sauce of artisanal cane vinegar, dark soy sauce, fresh calamansi citrus, and fiery bird’s eye chilies.
History & Origins
The Irresistible Chinese-Filipino Pulutan Union
Literally translating to ‘tofu and pork’, Tokwa’t Baboy was born from Hokkien Chinese immigration to Manila. Combining soybean cakes with tender pork snouts, ears, or belly, it became the country’s ultimate pairing for rice porridge (arroz caldo or goto) and cold beer.
Ingredients
Simmered & Crisped Pork Belly with Golden Tofu
- •1 lb Pork belly (liempo), skin-on, simmered with bay leaf and peppercorns until tender
- •1 lb Extra firm tofu (tokwa), pressed dry with paper towels and cut into 1-inch cubes
- •3 cups Neutral cooking oil for deep-frying until blistered
- •1/2 cup Reserved seasoned pork poaching liquid
Finishing, Garnishes & Chef’s Additions
- •3/4 cup Natural Philippine cane vinegar (sukang Iloko or Datu Puti)
- •1/4 cup Premium dark soy sauce (toyo) and 1 tbsp brown sugar
- •4 pieces Fresh calamansi citrus fruits, halved and juiced
- •1 medium Red onion, finely chopped, and 4 cloves fresh garlic, minced
- •3 fresh Red and green siling labuyo (bird’s eye chilies), thinly sliced into rings
Step-by-Step Instructions
PREPARATION & METHOD
Place pork belly in a pot with water, 2 bay leaves, 1 tsp whole peppercorns, and 1 tsp salt. Simmer over medium-low for 35 minutes until fork-tender. Remove, pat completely dry, and cool. Reserve 1/2 cup cooking broth.
Heat oil in a wok to 365°F (185°C). Fry tofu blocks for 5-6 minutes until golden and crisp; drain on paper towels and cut into 1-inch cubes. Deep-fry the simmered pork belly for 6-8 minutes until the skin blisters into shattered crackling. Cut into bite-sized cubes.
In a glass bowl, whisk cane vinegar, dark soy sauce, fresh calamansi juice, brown sugar, minced garlic, finely diced red onion, sliced bird’s eye chilies, and 1/4 cup of the reserved warm pork broth until sugar dissolves.
Tumble hot crispy pork cubes and golden fried tofu into a wide shallow bowl. Pour the piquant vinegar dressing generously over top right before serving so the porous fried tofu sponges up the dressing while pork skin stays audibly crunchy.
Beverage Pairing
Ice-Cold San Miguel Pale Pilsen / Red Horse Extra Strong
The quintessential pairing: icy Filipino pilsner or malt beer cuts right through deep-fried pork richness and amplifies spicy vinegar punch.
Culinary Science Insight
Acid Denaturation & Hydrophobic Capillary Sponge Action
Deep-frying tofu drives water out of soy protein pockets, forming thousands of tiny open pores; when coated in acetic acid vinegar dressing, capillary action draws savory umami deep into the tofu interior instantaneously.
