History & Origins

The Timeless Parisian Goûter Tradition

Dating back to the invention of choux pastry by Pantanelli in the court of Catherine de’ Medici and perfected by Avice and Antonin Carême, Chouquettes are France’s pure, unfilled celebration of choux dough, baked fresh every afternoon for children’s four-o’clock goûter snack.

Ingredients

Pâte à Choux Foundation & Emulsion

  • •1/2 cup (120ml) Whole milk and 1/2 cup (120ml) filtered water
  • •8 tbsp (115g) European-style unsalted butter, cut into small cubes
  • •1 cup (130g) All-purpose unbleached flour, sifted
  • •4 large Fresh eggs at room temperature (about 200g)
  • •1 tbsp Granulated sugar and 1/2 tsp fine sea salt
  • •1 tsp Pure Madagascar vanilla bean paste or extract

Finishing, Garnishes & Chef’s Additions

  • •3/4 cup Authentic French coarse pearl sugar (sucre perlé / sucre grain)
  • •1 egg Whisked with 1 tsp milk for golden egg wash
  • •1 bowl Whipped chantilly cream (optional, for dipping or filling)

Step-by-Step Instructions

PREPARATION & METHOD

1
Step 1: Boil Liquid & Dry the Panade

Combine milk, water, butter, sugar, and salt in a heavy saucepan. Bring to a rolling boil over medium heat until butter melts completely. Remove from heat, dump in all sifted flour at once, and stir vigorously with a wooden spoon until a smooth dough (panade) forms. Return to medium heat and stir constantly for 2 minutes to dry the dough until a thin white film coats the pan bottom.

2
Step 2: Incorporate Eggs Gradually

Transfer the panade into a mixing bowl and let cool for 5 minutes. Beat in eggs one at a time, allowing each egg to fully absorb before adding the next. Stir in vanilla. The batter is ready when it forms a glossy, supple ‘V’ ribbon hanging from the paddle.

3
Step 3: Pipe Mounds & Encrust Pearl Sugar

Fit a piping bag with a 1/2-inch round tip. Pipe 1.25-inch mounds onto baking sheets lined with silicone mats, spaced 2 inches apart. Lightly brush with egg wash, then shower heavily with pearl sugar, pressing gently so the granules adhere to every surface.

4
Step 4: Bake & Dry Hollow Shells

Bake in a preheated 375°F (190°C) oven for 20-22 minutes without opening the oven door until puffed and deep golden brown. Turn off oven, crack the door slightly, and let dry for 5 minutes before cooling on wire racks.

Beverage Pairing

Café au Lait / Parisian Chocolat Chaud / Demi-Sec Champagne

A frothy bowl of morning café au lait, thick Parisian drinking chocolate, or an afternoon sparkling demi-sec Champagne complements crunchy caramelized sugar nibs.

Culinary Science Insight

Vapor Pressure Leavening & High-Melting Sucrose Crystals

Pâte à choux uses no chemical leavening or yeast: high water content flashes into internal steam that expands egg-protein walls into a giant hollow dome, while compacted pearl sugar crystals resist melting at 375°F to retain crunch.
